LEARN HOW TO MAKE A QUICK LEMONGRASS UDON NOODLES STIR FRY TODAY!
LAY HO LAY HO! This quick noodle stir fry is savoury and hits all the umami and aromatic high notes! Join me in this episode and learn how to cook up an easy and fast lemongrass udon noodle stir fry recipe today!
Ingredients:
2 pieces garlic
1 small piece ginger
2 sticks green onion
2 tbsp chopped lemongrass
60g broccolini
50g shiitake
1 tbsp soy sauce
2 tsp dark soy sauce
1 tbsp lemon juice
splash of toasted sesame oil
1 tbsp maple syrup
250g udon noodles
2 tbsp avocado oil
2 tsp white sesame seeds
Directions:
1. Finely chop the garlic, ginger, and green onions
2. Remove the outer layers of the lemongrass and cut off the end. Bash the lemongrass with the butt of the knife and finely chop 2 tbsp worth
3. Bring a pot of water to boil for the noodles
4. Chop the broccolini into bite sized pieces and thinly slice the shiitake
5. Make the sauce by combining the soy sauce, dark soy sauce, lemon juice, toasted sesame oil, and maple syrup
6. Cook the noodles for half the time to package instructions (in this case 4min). Then, strain out the noodles and set aside
7. Heat up a nonstick pan to medium heat. Add the avocado oil followed by the lemongrass, garlic, ginger, and green onions. Sauté for about 2min
8. Add the broccolini and mushrooms and sauté for 2-3min. Add the noodles and sauce. Sauté for another 2-3min
9. Plate the noodles and sprinkle on some white sesame seeds

I will try this one this week. I have a touch of arthritis in my fingers that makes finely chopped or minced garlic and ginger difficult. I got myself a 250 ml USB cordless garlic chopper. I can now do both the garlic and ginger at the same time. It is quick and uniform and I don’t have to shy away from your noodle recipes - which have been a big hit with the family!!

@@kirsten1144 It doesn't sound stupid at all, it's a valid question! It's different from lemon in the fact that it doesn't add a pucker or acidic punch like a lemon, but adds a very bright, aromatic flavor to whatever you add it to. If your gf likes lemon, she will probably love lemongrass! Give it a go!

Wil, that noodle dish looked amazing - the smell of the lemongrass came through the screen for me! I love all those citrusy flavours and aromas. And those udon noodles look really good, too. I'm finding it hard to get genuine udon noodles here in the UK but perhaps this is one of those things you have to go to an Asian supermarket for. Another great video, thank you!

7:01 I must say, I have never used lemongrass like that - only added it to Asian curries/curry soups. But honestly, I love how fragrant and delicious lemongrass is so I suppose it makes these noodles an incredible, comforting flavour bomb! I definitely have to give it a go!

I just cooked this and had it. So simple to make and quite delish. What I love about this dish is its versatility. I didn't have udon so I used Vietnamese flat noodles. And in place of broccolini I used baby kai lan. Loved it. I will make it again and will add prawns to it. Will, I love your recipes as I can add seafood to it for my guests. 🙏. Thank you. 👍👍👍

Wow you're the first chef I think I've ever seen share how they clean their pans after in a way that's very similar to mine. I spray them off w water since the food is fresh cooked and not dried stuck yet, wipe down w paper towel, and heat up a 20 sec or so and leave on the hot burner to both cool off. And by then, my food plate has cooled down just enough from cooking that it's still warm, but not too hot to burn my mouth when digging in.

This is TREMENDOUS! Thank you! VERY tasty and easy. One thing - didn't have fresh Lemongrass (and no time to run to the Asian markets) - so I used dried (we buy the big bags at Asian markets) - it was AWESOME. Can't wait to try it with FRESH Lemongrass!

Just made this again tonight. This time I had shiitake, last time the store only had portobellos. The broccolini I just got already went bad! I had to substitute with frozen broccoli. Both times the dish was made were equally good. Thanks for sharing your delicious recipes! I make it for my non-plant based relatives and they enjoyed it as well!

I boil the lemongrass and use only the juice. I also add a boiled egg, dipped in the soy sauces with some sauted chicken/shrimps. My way, not necessary the best. Love from Mauritius. Thx.

Wonderful recipe and I am soon to make it. I tend to try to speed up the process wherever I can, being an engineer who also cooks. I take the green onions and cut them in half, half, then half again. Then each slice gets 8 cuts if my math is right. PS I live in a subtropical climate and I grow lemongrass, kaffir lime, holy basil and other herbs. Cheers and have a great Thanksgiving.

Thank you for another aestheticly pleasing video and a great recipe! I was wondering recently if you have something like a 'base sauce' recipe? I think that would be ideal for when you want to throw a dinner quickly together with some veggies and noodles to make an easy stir fry. I recently tried to mix my own sauce but the mixing ratio was off... 😅

Finally got this made, and oh my is it good!!! I love the sauce, and it is an absolute delight when you bite into a piece of lemongrass. The Broccolini just sucks up the sauce and adds a lovely flavour to it. I tried it both with lemon as recommended, and with Yuzu, and considering the money involved and how small a difference it made, I think the lemon juice is p;referable. If it was some delicate Japanese dish with very few ingredients, the Yuzu would be just the thing, but since it isn't that, the lemon juice is definitely the way to go.

If you want to substitute dried noodles in place of the fresh or frozen noodles, use 2/3rds the amount (in this case, ~167 grams).

You always finely chop your garlic and ginger. I use a small grater and love it as it is so quick to use.

I made this (for first time) last night and i have to say WHAT A WINNER!!! Soooo delicious, easy peasy to make and healthy too...i substituted the shitakes for quorn pieces as i had no mushrooms (other than psylocybin 😁), this certainly won't be the last time i make this incredible dish.
