I am so glad that my 6 months of self study Japanese makes me understand this comment somehow. I understand the Kanji "ta" meaning to eat. And "ni" as in from Nihon. Ughh I'm so proud. I just love the Japanese language and culture.

When the old man takes off on the moped to deliver food, that just made me feel so warm and fuzzy. This guy not only still works in this shop after handing over to his son, he even hand delivers the food after 40+ years. True pride and joy in his work.

@@dp-by1wg well from my point of view, most experiences in the USA are trying to get good customer service from a pop eyes chicken or McDonald’s where almost every employee if phoning it in that day. In Japan from what I’ve seen isn’t like that. They treat it as honorable as anything else. Where people in America think such work is beneath them and hardly worth their best effort.

@@dp-by1wg well true, but my point was in nearly all aspects of work. There’s a pride in doing your work well that just permeates the society that I don’t see here in the states. And I just think it would make the nation better if we had more of that mind set again. Hence my envy. Like I really like how there’s very little to no trash on the streets, but if you go to Philadelphia or Boston, or Chicago just trash even in the nicest parts of those cities.

I've noticed many times, Japanese keep improving one thing, and get it right, maybe that because it's cultural , I wonder what it is exactly though because it seems to be good, I don't think it's luck of burnouts I think it's equal to other states, but , yeah, maybe it's a cultural thing.

Supposedly once you learn them they are quite fast and accurate for simple math. Probably quite convenient in a kitchen where a calculator could get messy.

I couldn't stop watching! I absolutely love the attention to detail. The dedication, consistency, and preparation they put into making and serving these dishes is what it takes to be successful. After watching this, I would pay two to three times what they are charging just to enjoy one of these dishes. Now I am hungry and want to make and cook each one.

I do not eat seafood, never ate seaweed...I can take or leave rice, and I prefer something more hearty than soup....but I was mezmerized with the level of dedication, and attention to detail here...I couldnt look away. Its like watching craftsmen and craftswomen ply their trade...super impressive and entertaining actually. Edit: ok...the pork cutlet bowl had me drooling.

This is the absolute most perfect way of putting it, for some reason I couldn’t figure out why I liked these, but I always like the beauty how it’s like you’re the camera in a video game? You always kinda wish you could be a spectator in the lives of some people just to see what they do… and this is exactly that but with a more artistic touch, it’s almost literally is a still life piece… just several 😂 whatever FPS this camera was filming in

Because of my business, I would travel to Japan almost every month, and I always looked forward to dining at the little shops. But since the pandemic, I haven't gone to Japan for 19 months now and I miss it so much. The culture, the people the food and everything that's Japanese. What a country!

I love that they make the noodles fresh. I've never had or made fresh noodles before, it's looks so delicious. Everything that they made looks delicious and the way everyone worked so well together is just amazing.

It's actually not hard to make fresh noodles. All you need is flour and water, a round stick (rolling pins used for making pies or whatever are not ideal), your hands and a knife. You should look up a tutorial on youtube and try it.

This is to me the pinnacle of cooking. No pretense, all care, fast, fresh, practiced, perfect even when it's imperfect. There's a lot to love about this video but my favourite parts are small things like the practiced way all the cupboard doors are put away in order, or the way he uses a tile to measure the size of the dough pieces (how old is that tile? where is it from?) . If I lived near this place I'd probably go every day.

​@@Josh-ii7mg A good BBQ place I used to work at looked like this. It was very tiny, cramped, and old so even if everything where spotless you'd still see permanent stains and obvious signs of old age. At most, 4 people could be inside building comfortably but only 2 were needed to work the place.

@@xelkim9666 well, if you've ever eaten out anywhere and had the bubble guts or shit water the next day, its because they don't handle their food properly and don't clean. Or worse, you get food poisoning. I've worked in restaurants for 14 years, I know all about needing to put food on the table. The thing is, the food THEY put on the table should be clean.

@@Anthracite_coal stains and signs of age are different than actual caked on dirt and grease. I have respect for all restaurant workers, especially cooks, as I am one myself, but there really isn't any excuse to not clean.

The food looks lovely, but what struck me more were the view we got of outside, with the scooter delivery. It looks so quiet and orderly, despite being in the middle of a huge city.

This is so beautiful seeing how the food is being made by him, I love how Japanese cooks/chefs treat every food like it's their masterpiece! Much respect for him! Anyway guys, I'm going to visit Japan in the end of the year (hopefully the Covid is not that bad anymore so it's easy to abroad), and I want to know if it's easy/ difficult to find halal food like this in Japan? Everything looks so incredibly fresh and tasty. The noodles and sauces looks perfect consistency etc. Artisan level. Wow. ❤️ One day I will visit your shop. I live on the other side of earth.

Having worked in restaurants and also had owned one myself through all of my 20s. This is a lot of hard work, commitment and passion. I can’t imagine doing the dishes at the end of the day is like for such a small place. To get all those preps done in 3.5 hours is also astonishing. Running a hospitality business regardless big or small can age you x3 faster.

Some people push paper and some push food. This is all what is called work. I worked for years in the restaurant industry sometimes 15 hour days putting my way through grad school, in every position from saucier to line cook to front of house to server. I tel my wife often how much i miss the camaraderie in the back of the house we had. . Ive longed for that for the past 12 years since i stepped away.

24:25 lmao, they are legit using an abacus. That’s insane! Almost all of their equipment looks well used, even the tables and chairs. Shiny new stuff might be nice but you can really feel the warmth and care from everything.

Makes me miss working in the kitchens when I was younger. Mom and pops restaurants are some of my favorite places to work. Some the most stressful but its up the owners to set the energy. Very nice. Keep up the great work!

I really wish more people were as deliberate, dedicated, quiet-natured and efficient as Japanese people. They do things the hard way, each and every time. Not because it's convenient or more profitable but because it's the right way to do it. There's a lot of respect, discipline and measured control in each and every aspect. They strive to understand and perfect every little detail. They turn responsibility into a modus operandi. The world would benefit greatly if more people & cultures acted this way.

It’s all so amazing! Their skills and products are so high-quality! I’ve eaten zarusoba, but never zaruudon, so that’s the one I want to try most out of this udon-ya (?)’s menus. Also, the mixed rice looks like the most nice dish of its type I have seen, even comparing it to fried rice dishes. I really want to try it. Thank you to the proprietor, staff, and this channel for allowing us to see this! ❤️❤️❤️

and i noticed they picked off the brown tips too. with these extra steps they'll never expand like mcdonalds (thank goodness 😀) i wonder who invented the green onion cutter, probably someone who had to cut a lot of them
