Your brownies were amazing❤ Since I used Dutch processed cocoa and I used Dark chocolate chunks.. they were slightly bitter. So I guess using milk choc chunks would've been perfect... anyway amazing recipe❤

You can try to half the bake time or even less. Working with a similar (more or less) sized pan will make a thinner brownie, which will need less cooking time especially if you'd like them to still retain the chewy texture. There is a danger for it to turn crispy fast if you don't watch the bake closely. Hope this helps

I also find brown sugar makes brownies moist and that helps to make the difference. I baked and gave one of my college professors a copy of your Best-Ever Brownie recipe before I graduated. She was so intrigued by my baking after seeing me give one of my best friends in her class brownies to eat.
Yes, but I don’t recommend it as it would be way too sweet unless you make adjustments to the sugar. You can use applesauce or soy curd instead. Flax eggs will also work.

Can anyone tell me why I baked a chocolate cake and everything was beautiful from the buttercream filling and hard chocolate top but the sponge was very dense. I followed the recipe but I’d like a lighter thinner sponge. I’m new to baking 😀

hellow =w= ,! i do have one question ~•~ .. whenever i bake brownies (which I've done like three times xo) the edges will rise up more and the middle will be lower, even if everything in the middle is cooked ,, and the edges aren't hard! i just don't know how to get a perfect smooth flat and even surface =m= !
Hi. It sounds like it’s an oven issue and how heat is distributed in your oven. It’s also possible that the batter was overmixed, making the middle part sink and dense as a result. Hope this helps.

Your recipe calls for brown and white sugar both! As per your brown sugar tip, shall we use all brown sugar or half white and half brown sugar should be added? Thanks in advance.

I've never baked brownies more than 20-22 minutes. They set up better if they're underbaked and then cooled. No extremely hard edges and the middle is so fudgy soft. I've used your recipe and they never last long around here.
Sugar affects the result of your bake in terms of flavor and texture. You can use brown sugar only, but the texture will be slightly different, too soft or wet. Almond flour can be used too. Note that nut flours have natural oils in them, it can result in a greasy brownie.

I have tried many brownie recipe but they always come out raw in the centre, even when I made it with a brownie mix, it came out raw in the middle. Is there something I can do to fix it?
I’m sorry to hear that. It might be an oven issue, if you’re getting the same result using different recipes. I suggest you turn the pan midway through the bake. Hope this helps .

Great question! The process of creaming eggs, sugar and butter is about creating air. The whipping gives the mixture the air bubbles that make baked goods fluffy. In mixing melted butter, sugar and eggs, you do not get that air in, which makes it a denser, chewier product. My Best Ever Brownies are real fudgey and not cakey. I recommend you bake and then freeze them. You can also place it in an airtight container and place it in the fridge. Brownies have long shelf life, but they're usually consumed way before they get to spoil.
After watching this I followed your brownie recipe and WOW! It was amazing and very easy to make. I've always wanted to get into baking! I will definitely be trying more of your recipes :)
My brownies came out flat, less than 1/2 inch tall... I believe it's because I didn't incorporate air? I didn't overmix the flour, just folded over the batter till no white flour could be seen. How should I incorporate air? Using an electric hand-mixer, should I cream the eggs with the sugar or cream the melted butter with the sugar OR both eggs and melted butter with sugar?

Interesting. I've never made a brownie with brown sugar before. I may just experiment with it in my recipe next time I make some. My go to recipe though uses melted baking chocolate and butter as the base though instead of cocoa powder. Cocoa powder just doesn't seem right to me, that feels like a cake rather than a brownie.
I love Schaffenberger's cocoa powder. They also have bars of bittersweet that makes life delicious. Good chocolate does make such a difference. Counting the day's till your cookbook comes out. I wish you well.
Good recipe but I like brownies without all that chocolate chip inside...to me they are way to rich and are an overkill on a chewy chocolate brownie... Save the chips for a chocolate chip cookie recipe...thank you :-)
