I was thinking the same thing. We saw the normals do it so now we need to see the Head of the cooking team do it, and kush is great becuase of the way he explains things while on camera.

He did great work during the Wild Weekender, where he had two segments of, essentially, 'Kush preps team dinner while chatting food with Ebbers." The Skinny-Dipping Segment in particular was really cool, even if the approach there was basically "Make a fairly "normal" amount of 6-7 different things, so everyone just fills up on smaller portions of more stuff.

@sailorbrite Ben touches on it a little. Basically, the problem was that they didn't display enough "chef skills" vs "brute-forcing" the problem. They have "leftovers" in part because they made way too much mashed potatoes, meaning in a "real" kitchen that they'd be going over budget/wasting a lot of food. For instance: while I assume Ben is being at least a little hyperbolic when he says "5 kilos of extra mashed potatoes", if he ISN'T, that's ~20 servings, meaning they almost doubled the amount of potatoes they should have cooked. And as Ben pointed out, the potatoes were never truly seasoned, Jamie and Barry fought about if the potatoes were cooked long enough or had enough fat, all things that could and should have been calculated and prepped earlier. Similar issues with like, burning the bottom layer of the leeks (suggesting that they cranked the stove too high to try and cook the large volume faster rather than roast them or use two pans), not realizing their pie would need something acidic earlier and cooking out the wine with the veg, etc. It does feel comparably stricter than several other badges they've given for relatively thin results, but obviously, we can't see all the little details or taste the dishes to know how it panned out. I don't recall any discussion, positive or negative, for the broccoli, so if the overall reaction was "the pie's good, the potatoes are terrible, and the broccoli is so-so", it makes some sense to say that one true success out of 3 isn't enough to say they did well.

It does make sense I suppose. The lads on camera, the chefs (not just Kush/Slater, but those working with them), the camera and audio crew. I assume some editors, and a maintenance worker. Then you have people working on thier community efforts, the programmers and artist working on thier sorted app. People doing planning and logistics for their trips, events, and shows. Someone handling budget. Surprising, but makes sense when you think about it. Only way they could crank out so many videos all the time.

Jamie really was doing so much. Well-earned teamwork badge. He's much of the reason Mike managed his sauce badge and *should* have been the reason Barry would get a seasoning badge with how much he kept reminding him of things, despite seemingly very little of it sticking

In fairness to Mike, he did specifically tell Barry to salt the water for the potatoes and kept calling him over to give him the opportunity to season everything else. I'd have to watch again to see how much extra Jamie was doing in the background, but Mike was definitely going above and beyond to help Barry - surely the definition of teamwork?

This is probably the hardest badge to earn for "normals" who have been professionally cooking for 10+ years. After 10 years of being taught by chefs proper techniques for everything, thats always been singular meals, maybe the occasional family sized meal. Cooking for 20+ is a completely different ball game that the normals have little to no experience with.

And that's why I would like to see this done again, volume badge challenges in various ways. When you cook for volume, you need to start thinking about ingredient ratios and portion sizes. This is a skill that's not often shown in any sort of RU-vid cooking video that I've seen.

This is honestly one of the true chef challenges to me. Making one dish very well is doable. Being knowledgeable is doable. Meeting the volume demands of a professional kitchen though. That is what separates a pro and a normal.

I LOVE that the first thing Jamie thinks is 'What would Kush do?' Also, I knew the second he started cleaning up that he was gonna get an extra badge. I feel for Barry, but I'm so happy for Mike, cuz he did so well with the sauce. Well deserved boys!

Idk if this has already been done, but I'd love to see a "last minute substitutions" chef skills challenge/battle at some point - a bit like Jamies "improvisation" badge but focusing specifically on ingredient substitutions! Basically, in advance, the boys are given a theme for an upcoming challenge and asked to develop a recipe following that theme. however, on filming day, they're told that the theme is actually "ingredient substitutions" and one/several of their key ingredient(s) get(s) taken away. They must now find a way to substitute this/these ingredient(s) while still following the recipe as closely as possible. Example: They're asked to come up with a recipe for an upcoming "breakfast"-themed challenge. Barry's recipe includes a poached egg. However, on filming day, the eggs needed for his recipe are taken away. He now has to come up with somwthing that resembles a poached egg...but without actually using an egg. I'd love to see how they would handle that situation and what substitutions they would come up with - the chaos and panic would be hilarious! Plus, having to substitute certain ingredients for others at the last minute is probably something most people can relate to, so this video might actually also be somewhat educational??

Taking away the main ingredient may be a bit harsh and in my opinion takes away from being "educational". If I planed to make poached eggs - to stick to your example - and ran out of eggs I would make something completely different and not trying to substitute them. But e.g. if the milk for my mashed potato is spoiled, especially if I recognize it last minute when everything else is already prepped/cooked I would **have to** come up with a way to fix the mashed potatoes. Maybe it's a different concept/idea to take away staple ingredients while they are cooking: "You though you still have vinegar but you put the empty bottle in the pantry", "The onions/garlic/milk/... you wanted to use are spoiled and can't be used", ...

I could not love Jamie more. Between getting bored cutting mushrooms and kissing Mike and Baz on the neck... he is perfect. 😂 Also, I rarely need to say veloute, but every time I say "halloumi," I find myself using the same pitch and cadence that Jamie uses for the former.

Cooking for 20+ is a completely different game, especially when there are only 2-3 dishes. The easier route for normals (like me) is to make 8-9 big family sized dishes, buffet style. That's how I survive my dinner parties. Like Mike, I wouldn't even know how many potatoes to peel to make mash for 30 people 😂

How to scale potatoes: think how large a single portion of mash should be and how many potatoes would you need for it (depending how large they are), multiply by 30 and that's the number of potatoes you need to peel. So probably about 45 larger ones to 60 smaller ones should be enough.

There is also the "better off cooked" standard. It doesn't really apply in a restaurant (or Sorted) setting, but it is much easier to simply eat leftovers than it is to cook a new dish, especially if the fate of the extra ingredients is yet to be determined. It's amazing how stretchy recipes can be; if the recipe says 3/4 lb mushrooms and you had to buy a whole pound, use the whole pound. Of course that relies on your ability to adjust the seasoning, but so does scaling up. No recipe scales from family size to banquet size without needing some kind of fix (it's where we volume measure cooks have an advantage). Cooking all of the potatoes wasn't a bad call, letting them taste terrible was where Barry produced wastage.

@@joelcarpenter7243 That very generic rule doesn't take into account how many courses there will be, whether the potatoes are going to be main carb, etc. You don't need as many potatoes when you serve them as a side for pie, compared with for example bangers & mash.

Kinda 50/50 on the seasoning badge. Although the mash didn’t turn out great, brocoli seemed well thought out flavour wise and a large reason Mike’s sauce turned out well had to do with Barry’s seasoning suggestions such as the wine reduction.

I think it was very fair! Mike did brilliant with the sauce, and Jamie was running the kitchen. He really stepped up and kept everyone on the same page and was helping the other two out. Good call giving him the teamwork badge, well deserved!

This was a tough mission. I used to batch cook some dinners for school groups on outdoor sports weekends, so I get this one for sure. That said, if people have been exercising all day they tend to ignore mid-tier cooking so I got away with it.

My dad learned to cook at a bar he owned, so anything he made we had leftovers for a week, even with five kids. The last of his beef stew always went to the dog -- who would carefully set the peas to one side and devour the rest.

I know that half of it was likely just looking for opportunities to improvise, but it really was nice to see Jamie step up and being a leader. Mike usually does that, keeps communication while Jamie improves spirits. With him focused on the sauce it was great to see Jamie keep communication up, and the cleaning and planning and such was just thoughtful. Well deserving of that second badge, much as I wanted to see Mike pull things into a tie.

We really need to see more of these~! I'd love a format that's a little more educational though. In this case, the normals had no clue, and the audience had no clue. It'd be awesome to see Kush and Ben walk them through the skills in one video, and then do another like this one to redeem themselves

This was an interesting one for me. Having been a "home cook" all my life then being made redundant by COVID-19 and a friend of a friend saying he needed an extra chef in his restaurant and being thrown in the deep end as a professional chef in a professional kitchen this resonated with me.

Loved this one. I used to be head cook with a staff of three for four hundred students . Cooking -it-up or down was an everyday experience when the count reached the kitchen. Thanks.

Video idea: this video got me thinking you’ve mentioned several times that you have a crew of 30 but we rarely see any of them. I actually have no idea what 30 people are doing every day. you do have a film crew and some people are probably help you, prep. But I think it would be really nice to do a video that highlighted these behind-the-scenes people. My guess is that you would really have a hard time getting all these great videos and being the Business that you are without them. So I would really like to see you highlight these people ,introduce us to them and showcase their contribution to SORTED.

As someone who has worked in kitchens that cook for a lot of people, this is truly interesting. You're a team and should work together as such, meaning no one is too good to do any of the work. I know the setting is different but it's still entertaining 😁

Absolutely agree with the badge decisions btw, Barry put some effort into seasoning but he was inconsistent and not keeping up with what the others were doing or working together with them to ensure the seasoning was great.

When we make mash potatoes for Thanksgiving (around 30 servings because leftovers) we use a hand mixer to mash and mix it, works like a dream

Here's a strange compliment. I have a habit of skipping forward 5 secs in all videos on YT, more as a habit than for any other reason. But this damn channel, every time I do I feel like I've skipped something hilarious or very interesting, skip back again and have a wonderful time seeing what I nearly missed. Been waiting for a new one of these videos, I love this format. Well done gentlemen. We had a team of 10( one Baker, 1 kitchen head, and 8 cooks. Three protien options, two veg options two starch options and we would have loved to only cook for 30 people. We were feeding 1500 hungry Marines and Sailors.

Straw poll - who would like to see Kush and Ben do EXACTLY this challenge but by the numbers, pulling out all the cheats/hacks/'methods' and showing us how to do volume. The idea of cooking for more than 4 is terrifying and all my food horror stories relate to volume as a challenge.

This video gave me war flashbacks to working in a kitchen and the sheer volume of food you have to work with. Great video! Keep at it boys, cooking at a large volume is honestly it's own set of skills than homecooking.
