Fellow lefty. When my orchestra toured Japan in 1998, I went to Tsukiji Masomoto just off the Tokyo fish market and bought a left-handed Yaniga, they engraved my name in it. Doesn’t see a lot of use but my coolest knife by a mile.

As a knifemaker these vids are super educational for me. I've been making santoku and gyotu style with wa handles and a Haven't looked back on western style blades since. They just perform so well in the kitchen! This content definitely inspires and helps me step my game up. Thank you! Last blade... Holy shite! Id definitely have to slice something with it! Ma ey an eggplant, squash, zucchini or something that wouldn't tarnish the edge or finish and immediately clean and wax it.

I was getting upset at the fact there are so few comments on this video. Then I saw it was uploaded 1 hour ago! It is so nice and interesting to watch because of both the knives themselves and the stories. I just had a meal and this smooth jazz background music with the storytelling goes so well with how I feel after finishing the food. And thanks for the crawfish lobster education! I would love to shout "This is a crawfish you i*iot" in real life. Bonus points if it is to an obnoxious, snobby guy at a formal function lol
