Master Stone (石字刀) is a chinese blacksmith making stainless clad 52100 core cleavers. Their cladding extends all the way to the spine. Also their grind is on point 👌

Those super "aggressive" kiritsukes are badass af... but they're also delicate af. I had the slightest bump on the tip with one, and it took a chunk off (SG2, Shibata Battleship). Worst part is that unlike a gyuto, there's really no good way to fix it. You need to remove a ton of material. There are sort of some applications for the super fine tip, but most of the applications are better due with a petty knife anyway.

Great point, they're definitely way more delicate and tricky to fix without a belt sander. I dinged mine on my sink!

That Sakai Kikumori 210 gyuto looks exactly like a Matsubara. It looks absolutely fantastic.

Hi ! Do you happen to know who grinds and sharpens those kikuzuki knives from sakai kikumori ? Also, do you have any info on Kouichi Morimoto-San and his work ? Thanks and keep up the good work

Why ist the Nigara Kagetora 240mm gyuto on the knifewear homepage labeled as "available at the garage sale" and the 210mm labeled as out of stock? Was it already sold?
