My mom used to pour a little, well maybe a lot, of melted butter on the top of her pound cake right as it came out of the oven. It made it even better.

I ate some Coconut pound cake today and it was the best I've ever eaten in my life!!! This lady makes them, she is in her nineties and been doing it for years. It wasn't real dense, the coconut flavor was delicious and it just melted in my mouth. I'm going to try this recipe...hope it is as good as the one I ate today!! 💜
Never seen it before either. Using it from the bag would work I know but I'm really curious as to what frozen coconut looks like, lol. Think I'll cut this recipe in half. I just made a pineapple flavored sponge cake yesterday. It's good but it needed more pineapple flavor. Already know how I plan to get that in it. Both fresh strawberries and blueberries with a little bit of whipping cream would go great with this one and the pineapple one... 😋
O my that looks so good. I bake always 6 poundcakes and put in freezer. And instead of bread with breakfast we eat a slice of pound cake. My Sister teach me how to make that 60 years ago. Since she past away christmas 1 year ago i teach my granddaughter how to make old Ankie her poundcake. Its yammie. Love you.

I loved your recipe I also tried this with sweetened coconut condensed milk instead of sugar and regular condensed milk. And no fresh coconut. Still was delicious.
I made this twice already, and I have to say that this is a FABULOUS cake and a very reliable recipe. So, so good! The second time I made it in a pan that makes 4 mini bundt cakes, and the recipe makes exactly two batches in the 4 mini bundts. And the smaller pans cook the cake perfectly at 45 minutes, with a beautiful caramelized exterior and light, fluffy, coconutty interior. Thank you Tammy! I’m fascinated by your mixer, I’ve never seen one like that, as I’m from England guess we don’t have that brand here. I always fold a third of my egg white in to loosen the mixture and then fold in the rest, that way you loose less air. Thanks for your great recipes ❤️
