Hi Pam. Thanks for another fantastic video! My comment is off-topic, but I wanted to share my new solution for storing my bread pans, specialty pans, sheet pans and other miscellaneous equipment. I have a full sized four-drawer filing cabinet (15” x 28.5”) just off my kitchen in my garage. Most of the stuff in there was very old. I emptied out all the papers, and to my surprise I could pack a tremendous amount into the long tall drawers. Now it’s so much easier to access everything than climbing on a stool and reaching back into a high, deep cabinet where I would have to unload half the stuff to get at what I was looking for. I also individually bagged everything in clear poly bags so that they would stay clean.

We are doing the same in areas other than the kitchen but we are working on a pantry off the kitchen and I love this idea for that space too! Using the file cabinets for storage was my daughters idea. Even better, the file cabinets were free from a business that was closing.

I love my two steam canners. I have the one like yours as well as the "top hat" style. They're awesome for doing small batches of jams or pickles (or fruit) or multiple quarts of things. It' SO much better than water bath canning (in my opinion). Water bath canning kind of scares me, I'm always terrified I'll drop one of the jars and splash boiling water all over myself. Steam canning removes that worry! I also love how much lighter the steam canners are because they use less water. They heat up faster, and they cool down faster too. It's a win-win-win!

I'm looking forward to your steam canning videos. I bought the same canner a few months ago and haven't used it yet. I am so grateful for your videos and practical ideas. Thank you so much.

Make sure to follow the instructions as Pam mentioned to test the canner before you are processing food. The gauge gives a general idea but you have to note where on the gauge is the processing temp for your exact elevation. I marked mine with a sharpie and the timer starts for me when the needle moves to about 1/4 inch into the green zone for my altitude.

I am looking forward to the videos. I can't use the "top hat" steam canner on my glass top stove because of its wavy bottom. But I have been wanting to try steam canning. We have well water, so we are too are at the mercy of the weather

I love my steam canner. I am never going back to my water bath canner unless there's a specific recipe that needs more than 40 minutes processing. I can't even think of what that would be.

I was so thrilled to see the title of this video! I bought a “top hat” style steam canner last year and am absolutely loving it!!! Can’t wait to see your future steam canning videos.

That's a very interesting steam canner. I think it's a better option than the giant 64 quart pot I use for water bathing.

Thanks for the video. I bought this canner last year. I've yet to use it. I look forward to your videos of canning with it to get great ideas.
