Easy foolproof fillet steak. Cook in sous vide 54 degrees for 45 minutes. Remove from water bath, dry thoroughly. Have pan smoking hot (with beef dripping). Sear both sides for 30 seconds. Rest 5 minutes. Perfect every time.
