In case you didn't watch my last video (ref: • Unique UNAGED RUMS (Pa... , I picked up four "white rums" that are produced slightly differently with widely different flavor profiles! This bottle from the Killik distillery in Australia was bottled by Dead Reckoning and is the second one I tasted of this bunch. It is considered a "high ester rum", however, that's relative... Overall, I really enjoyed this rum, I just wish I could find out more concrete info about the production practices at Killik distillery (I suppose that means I should reach out to them).

completely different (native!) fruit in US: related to chirimoya, soursop/guanabana, sugar apple. Kinda tastes somewhere in-between banana and mango.

I assumed they were talking about the US fruit, but maybe since they're Australian they were actually referring to papaya? Although, I could definitely see picking out notes of a fruit that tastes like banana and mango in the Killik!

Thanks, great to see your review. I grew up in the same part of Melbourne (state of Victoria) as this distillery. I think it is now located in Belgrave but began in Ferntree Gully (not 100% sure). These are nearby suburbs anyway. I can tell you that by Aussie standards, Killik is pretty funky. I don't have any extra info on the production, sorry. I've got a bottle of Killik ‘Handcrafted Silver’ at 59% ABV. I got a lot of Juicy Fruit chewing gum and bubble gum aromas and flavours. So that's quite different from your notes. Batch variation is likely to be quite wide. Until recently, Aussie rum was dominated by two large producers, both located in the state of Queensland: one is OK, the other is pretty far from OK! Rum-and-coke fodder for the most part. But now we have craft distillers working on quality and flavour. Fun fact: rum was an official form of exchange for the first 25 years of British settlement in Australia. Cheers.

I should clarify: my distillery bottling of Killik was made at the Ferntree Gully site, the Dead Reckoning juice was made at the Belgrave site. Moving distillery, or a new distillery, will explain a batch variation. Aside from the Dead Reckoning indie bottler's stuff, international rumsters should note: any indie bottling of an undisclosed "Australian" rum is usually Beenleigh, not Bundaberg. Same as "Orkney" is usually Highland Park. And Beenleigh can be very good if aged and presented well. But it's definitely not a funky one.

Thanks for that tip! I'll keep it in mind when I see bottles of undisclosed Australian rum! I wouldn't be surprised if there was batch variation at Killik because I believe they're using muck to initiate fermentation and the microbes within muck can vary. But also, as you mentioned, changing distillery locations could certainly impact the flavors!
