I baked in an electric convection oven. If your oven temperature is too strong then sure you can bake at a lower temperature with both top and bottom on.
Yes you can, I keep them in an airtight container and microwave them just before serving. To prevent ice crystals you can wrap them first with a cling wrap or baking paper then place them in a container or freezer safe bags.
Yes exactly 12 Standard sized Cupcakes, link for standard Cupcake liners in the description with the baking pan. But if eggs are too small then it might not be.
You can bake on gas stove using a deep preheated pan or Kadhai. Place a small stand or a bowl first in the pan. Then place the cupcake tray. Cover with a lid. Cook on low medium heat for 25-30 mins or till a toothpick inserted in the middle comes out clean

Everything is fine but how to measure eggs exactly 125 grams??.. I mean 2 eggs can be 110 grams sometimes and even 140 grams..so how to measure it 125 grams exact?
If your eggs are small then you can add some egg white from another egg. I too didn't have the exact weigh and added egg white from another egg. I usually choose the large weight eggs by measuring with scale and then after removing shell weigh again. Add more egg white to adjust.
Both rods on, middle shelf rack, baking mode. Bake @180C in a preheated oven for 22-25 mins or till a toothpick inserted in the middle comes out clean. It took 22 mins for me.
However powdered Stevia tends to be sweeter than regular sugar so recommend using half of the powdered sugar used in the recipe and then tasting the batter at the end if required add more

No that's the weight of liquid in ml written on a standard measuring cup 250ml. Weight of flour or any dry ingredient put in the measuring cup varies depending on its weight. If you don't own a weighing scale then I recommend that you fluff and scoop out the flour into the cup with a spoon and then level it by taking out the excess from top. Taking the flour directly with the cup will usually put more than a Cup of flour and result in dense cupcakes.
