Overt fats are over fats - you may not be getting the cholesterol but the liver still takes a hit. The hospital beds aren’t loaded with people who are eating whole food plant based diets with predominantly complex carbs. Another great video! I just cannot do keto, I eat a LOT of fruit, and they are high in "carbs". I had done keto before going plant based, and it made me sicker and sicker. My coach kept telling me it was "keto flu", just eat more bacon! After 3 months, I just quit!!! Could NOT handle that anymore. Went whole food, plant based, and now on day 198!!!! Feeling amazing!!!!! Thank you for all of your help! 💜

And I think you did awesome! I found that after I was in ketosis for a while and very well fat adapted, I could go way higher in carbs IF it was from non-starchy vegetables. It seems to me that the source of the carbs makes a difference as to whether or not I get kicked out. IE Too many nuts or potato/carrots = kicked out VS extra cauliflower or broccoli? no problemo

@@kaliblue For me personally, yes! It took me almost a decade to figure out since none of the scientific literature seemed to align with my experience. So I'm not sure that it will work for everyone. However, since I've shared my story, I've been hearing from lots of people in a similar boat!
I did vegan keto for my youngest kid when he had seizures. It definitely wasn’t easy, but that paired with a non medical treatment for a year and he was completely seizure free!
Yea this is the practical application for sure. I should have mentioned it. So happy to hear it worked and without medicine. Amazing. So happy he is doing well and good on yah mom for putting in the effort!

@@ModernMozart1104 it’s called neurofeedback therapy 😊 and yes, the diet shouldn’t be done long term anyways. But we followed for a year and moved him back to a healthy whole food plant based vegan again. Do research the top neurofeedback therapist in your area, and have consultations- see who can best fit your needs. If you’re in/ around Los Angeles, call Andrew Hill (peak brain institute)- he has 3 locations and is a bloody genius ✊🏽
I could never go keto, but I hope you make more videos like this! Challenges like "keto", "extreme low budget", "10 minutes or less", etc. really force you to create new recipes and you always get interesting results which maybe you can improve upon and add to your regular diet.
? My girlfriend was doing keto and she would never i mean never eat beans or smoothies ever. She would only eat like 3 strawberries worth of fruit for the whole day it was insane
If I was gonna do vegan / keto sushi, I would make natto rolls. Cauliflower rice, scallions, and natto. Simpler and far easier to make than what he made, and WAY lower in carbs. It was all the sunflower paste he added, a cup of it is like 20 g's of carbs. Even 1 medium avocado is like 13 grams of carbs, we have to remember it's still a fruit even though it's not sweet. I like Indian food. Some tofu masala, lupin dal, and aloo gobi (replacing potatoes with turnips) is delicious and low carb and I think will be a more substantial meal than sushi.
Welcome to my world. I've been vegan since 1987, but a couple years ago found out I'm pre-diabetic (probably genetic, not the high carb diet) so now have to eat low carb to keep my blood sugar down. Not keto, fortunately, because I also have kidney issues, but I aim for 60-80 net carbs per day. Some things I learned: Use fiber to cancel out carbs, even if you have to sprinkle in a fiber supplement. Brassicas are your friend, especially cauliflower which is very versatile -- think cauliflower rice, mashed cauliflower and even cauliflower pizza crust. These are mainstream enough now that grocery stores carry them. Make low carb baked goods with alternative flours like almond flour and coconut flour, and sweeteners like stevia, monkfruit or allulose. For breakfast I usually have some kind of vegetable salad with vinaigrette, since apple cider vinegar first thing in the morning reduces blood sugar and I don't want to actually drink vinegar. I add plant based egg, either scrambled or in omelette strips, for protein, and mix in one slice of whole grain toast torn into pieces to soak up the dressing. It's not that different from the classic Italian panzanella salad, though slightly weird as a breakfast.

Nice to see, good video! Happy to see you are not scared to eat high fat from whole foods for a day. I would never eat low carb. Many years ago my husband did it (before he became vegan) and he became ill. Although he was eating a lot of vegetables all day. Keto is very unhealthy. Three neurologists, Dr. Lisa Mosconi, Dr. Ayesha Sherzai, and Dean Sherzai don't recommend it for brain health (quite the opposite: they recommend NOT to be in ketosis). We are now eating WFPB vegan, and we feel better than before, when we ate vegetarian. Ditching dairy and eggs was a great decision. And your channel inspires us a lot. We always use your recipes for inspiration.

I’ve gone through raw eating periods in my life and it’s easy to slide into high fat-that sushi wrap gave me flash backs. High carb low fat WFPB is where it’s at, but this was enjoyable to see❤
LEMON/PEPPER. A spice combo you might find unique plus delicious to use on tofu/soy curls/Seitan and any place else that grabs your attention. Yum good! I'm sticking with the WFPB and high carb potatoes and as little oil as possible. One of my favorites is damp soy curls, lemon pepper at air fried at 420 degrees - cornstarch and lemon pepper mixed together is also good and gives a slightly different texture/crisp.
You were wondering where the carbs came from in that sunflower spread. Probably the garlic. I was surprised to find how many carbs garlic has. But... who cares? I spent years worrying about proteins and carbs and micros and macros and finally just said screw it and just focused on eating WFPB SOS-free. When I did that, the weight flew off and my bloodwork looks phenomenal. Finally. : )

Hey Derek! As a post-menopausal woman who needs around 150 grams of protein a day, I really appreciate your high-protein meals content, especially. (Yes, 150 grams a day. To each their own but for most post-meno women, including me -- this is IMPORTANT to maintaining weight and health and muscle!). We stop processing protein as well as we age and we naturally lose muscle mass starting around age 30 if we do not strength train and keep up the protein intake. Thank you!! Hi to Crystal, too!
@@jademusic1211 As I said, every body is different -- to each her own! I was unable to lose one single pound that I'd gained post-menopause until I upped my protein AND started weight lifting, with moderate cardio, no more than 30-45 minutes a few days a week. That's the magic formula for my body.
Wow I have been low carb vegan for almost 4 years, My carbs are well under 30 daily and sometimes under 10!! I have a 0 carb Tofu, 0 carb pea crumbles {both high protein} zero carb Konjac noodles, all of the lowest green vegs: arugula, kale, greens, herbs, celery, zucchini, mushrooms, cucumbers, cornochons, lupin bean products; pea products; Meatti steaks {great nutrition panel}. I make my own low carb bread, zero carb mayo, zero carb ricotta! This is totally doable!! And I just got my bloodwork done and it's the best It's ever been, highest B12 my doc has ever seen ;)

Hi Derek, I never knew about detracting fibre from carbs. Good to know. My partner and I were in a very strict keto program for 6 weeks in 2013, we were not vegan yet and it was already hard then! It Started with 3 days of only 20g carbs, then rest of the week 50. After the first week, you did 1 day of 20 per week, rest 50. And.. we did not deduct fibre! Goal was to clean up waste products and superfluous fat and transform the metabolic system to use fat as fuel. After 6 weeks slowly adding carbs and come to natural weight and keep eating clean. It worked perfectly but I’ve never felt worse. Went from 62kg to 54 in about 3 weeks, whereas I had normal weight with 1.70m. I was hungry all the time, legs shaking, no strength, lost my period, and my coach was not helping, said I should add some protein. Instead I added carbs and I felt much better. I had 100g carbs a day and was still in ketosis. You can eat very little vegetables and fruit if you want to stay below 50g carbs. We could have for example 1 half apple and 1 half orange a day. 250 grams of raw vegetables, 200 grams of cooked vegetables. And 9 to 12 protein portions a day, where 1 portion was about 8 to 10 grams of protein. We did get premium supplementation, so we got all nutrients. But it was very low on calories as you can imagine. Hence the losing weight. My bf lost 18 kg in 6 weeks, from about 100kg to 82kg with 1.84m. After that he regained about half, which was fine. I got back to my original weight 62kg. Now, vegan and WFPB since 2017 about 60kg and easy to maintain on the Daily Dozen by Dr Greger 😊 Hope to never having to do keto again, really hard on a plantbased diet.
If you never did keto before, fat adaptation can last several months, so it is "normal" to feel like shit. Later on energy comes back somewhat...However at least for me to stay keto was too limiting. I kept it for a few years, but eventually started to gain weight back, as it is very easy to exceed calories on keto - you can eat 1000 cal in macadamia nuts per day even without noticing. Or cheese. Now, after those years in keto I switched to WFPB. Still limiting carbs somewhat, no bread, pasta, rice, but having oatmeal (oh, how I missed it...), beans, lentils. Probably the biggest downside of moving WFPB is anxiety which is a side effect from being in keto-low carb bubble and being programmed that plants and oatmeal will kill me.
@@ZmogusJaponija our program luckily was only temporary, to clean up waste products from the body that are stored in fat cells, this could be done in 6 weeks for people with no or a little overweight. Only people that needed to lose a lot of weight, would do more than 1 round of 6 weeks. We did manage to adapt quite quickly to fat burning, and I was still in ketosis even when I added some carbs (vegetables, no pasta or bread etc). After the program I first had some anxiety as well when adding carbs to get back to a normal sustainable diet. But that faded soon, now feeling great as a vegan on a WFPB and I can eat as much as I want 😊
@@heleen313 btw, I am still planing to have occasional low carb days. Also at some point will try to do fasting mimicking diet - i.e. 5 days ~500-800 cal from plant fats. There is good results from such protocol reported. I also have once per 3 months longer water fasts, 3-5 days.
I like that you did this because I think it illustrates how hard it is to do keto healthy. I went vegan keto for a year and it was very challenging to do it without eating a lot of processed foods. I ate a lot of vegan keto pancakes (with monk fruit maple syrup) and salads with tofu. I had to create a lot of fat bomb recipes because getting fat without carbs on a plant based diet is really difficult. I did lose lots of weight but my mental health took a huge hit and it’s not sustainable. Sticking to wfpb/nutritarian from here on out. ❤️
Every body is different -- glad you found what works for you and your body! For me, I found around 1/3 protein, 1/3 carbs and 1/3 fat works great -- and at least 130 grams of protein a day. But that's just for me, everyone is different!
it was a fun experiment for you to be creative in the kitchen (and at grocery) but the highest fiber foods tend to be those with high carbs - and based on all the research, a high fiber diet(with plenty of diversity) is the way we feed our gut microbiome....so i say yay to whole-food carbs and nay to restricting them!
If you feel like you're eating too many carbs, research which foods are low carb and start to incorporate those foods into your diet. If what you're eating/doing is working well for you, keep doing it and don't worry about changing things up.
Dr. Greger is starting to do lectures for his new book, How Not to Age. He says bodybuilders have it all wrong and don’t need extra protein. In fact, he says low protein is the key to longevity citing Longo and Sinclair. I’m sure this is a challenge to your beliefs. It would be great for you to have Dr. Greger on your channel again discussing this and his new book.
I’m sure they are right! I have the book, haven’t read enough of it yet. I was lucky to be sent an early copy! I think there is a way to balance both health and muscle building though.
Thank you I have a tip for stirring nut butters you might want to try and share, use a chopstick. It gets all the dry on the bottom to mix with the oils on the top, stirs better and less sticks to it then a knife (or worse a spoon)
I’m excited for this video bc I’m doing vegan keto as treatment for inflammation. I’m one month in and my hands stopped hurting about 2 weeks in. I’m really excited. I won’t be staying on this permanently, I love my wfpb Diet too much, but I will definitely be using it on and off for pain management 😊❤

I did nutritional ketosis as a vegan for a couple months, and lost a bunch of weight i gained from a chronic illness i used to have. My chronic gastrointestinal bloating went away too during vegan keto. I continued to lose weight for a few months after i ended the nutritional ketosis. But i will say that the diet was a bit miserable. I love carbs, gdangit!
This was such a great video for anyone who needs to do a lower carb life and is interested in plant based health. Maybe to fix a health issue. Once they heal they can go back and figure out what carbs work for them. I realize you and your subscribers enjoy the carbs but it so great to address anyone who may need low carb. It was educational and I appreciate you taking the time.
Amazing ideas in this, thanks so much! I love the idea of seaweed wraps with sunflower spread, definitely going to try this soon. I've been eating first keto, then moderately low carb for 2 years, currently less than 100g per day. High carb foods tend to mess with my digestion and trigger unhealthy cravings for me, just my personal experience. Your macros at the end of the day are pretty much what I'd aim for currently, maybe just a smidgen less fat. I recently 'discovered' defatted peanut powder in plant-based yogurt, delicious and helps a lot with protein. I'm starting to realise vegan low-carb is totally possible. Thank you!!
I little tip for the keto sushi: Since keto relies a lot on fat, once the roll is done, you can lightly brush the nori with a little bit of toasted sesame oil. In usual sushi the nori sheet would get moist by the rice, but since there's not a ton of moisture in the vegetable used here in the video, the sesame oil would do the job + gives extra flavour. I learnt this when I started making a sushi / gimbap hybrid at home years ago and I've seen people brush the final gimbap with sesame oil. I tried it with rice-free "sushi" as well and it worked wonders on high fat low carb. Best of luck with anyone putting a rice-free sushi/gimbap roll together though, I'll admit this guy has some skills rolling it up this nonchalantly!
I grew up earing half a plate of carbs/grains because it's cheap. Now in my 30s, ive cut down to 1/4 plate grains and adding more raw veg. I feel much better after meal.
I have done 8 weeks each year for the last two years of dieting and eating no carbs as a vegan is really difficult but if you want to look a certain way you have to do it💪🌱
Vegan keto is actually quite diverse when you get to learn your carb threshold. There are so many vegetables, berries, nuts, seeds, nut and seed butters, tofu, tempeh, fermented foods like miso and sauerkraut/kimichi, avocado, olives, hearts of palm, almond flour instead of regular flour, baked squash, herbs, spices, Quorn etc. You can make low carb pasta from edamame beans, courgette or squash. You can make cereal and granola from coconut, nuts and seeds baked with psyllium husk and stevia plus cinnamon. You can make oat free oatmeal etc. Potato free chips from squash or courgette. Potato free mash from vegetables etc You can also make homemade low carb bread and cookies etc from almond flour and psyllium husk too. Theres some really good vegan keto chef bloggers on YT sharing recipes 😊

Interesting experiment. Your sushi wrap looked great! As a small woman and pre-diabetic, I have to eat vegan low-carb just because I gain too much weight if I’m eating high-carb. But the key is low-carb, not no carb. I don’t eat processed carbs like bread but almost all vegetables are ok. And tofu is a lifesaver because most other beans are so high carb. Heavenly Fan’s RU-vid channel has great keto vegan recipes.
I find carbs have different effects depending on what i do with them. Like potatoes freshly cooked have a faster release than cold potatoes next day where the starches become resistant and more complex? or something. Same with beans... If i cook them and have straight away, it feels different than when having them cold next day in something. Even reheated foods with carbs in are different in effect than freshly cooked. I tend to favour high protein carb foods because the protein is satisfying. I'm also a small woman, but not sure am pre diabetic. I'm very sensitive to sugar though - if i have a bit it tends to turn into a lot like setting light to touch paper - even with the humble banana; but if keep it low ii don't miss it and feel much better regulated all round.
@@isabellezablocki7447 I did this as a teenager - it does work, not least as it meant illuminating (for me) loads of dairy. However! For absolute sure, it's not good long term as we need healthy fats -seriously we do. Especially women.. hormones are stored in fat for one. Fat is essential for brain health. I had to reintroduce and felt really sick when i ate my first pumpkin seeds and avocado - my liver had gotten used to very low fat maybe?? It was a challenge. I had done very low fat for a year or two... and i did feel really fit aerobically for the first time in my young life, but please don't do very low fat long term - not healthy. Healthy fats won't contribute to weight gain - i did not re-gain any negative weight for reintroducing good fats.

I did Vegan Keto for a month a few years ago. The most miserable month of my life. I mostly did it because I have trouble focusing and read that Keto might help. But a diet in which you have to weigh fruits and vegetables is just not for me. I also had to deny a desert someone made for me. I ate a spoon of that desert and was terrified for the rest of the day that that spoon would kick me out of Ketosis. I think it has a lot of benefits for some people, but I don't want to spend my life weighing food. Also pasta and bread ❤
Definitely an A+ for effort! I'm a whole grains lover, but I've been very low carb previously, (not as a vegan.) High carb all the way for me. But I do like making sushi to go, using already cooked brown rice. I bring some to share when I'm out with my mom all afternoon every Wednesday. One thing I don't do often is make dips or sauces, much other than tahini dressings. I need to up my game on that front. That was a creative lunch. Looked pretty too.
I enjoyed your share of this challenge. Carbs are not our enemy. Inactivity and poor diet are far greater detriments to health and ideal body weight than complex carbohydrates ever will be. I believe you made this point, hopefully it is heard beyond a congrats for one day of a vegan diet I have no desire to attempt.
Carrots have too many carbs, and sunflower seeds too. Have them but in moderation if following a keto diet. Low carb alternatives = parsnips (roasted yum) peppers - green lowest - yellow - orange - red most sugars - don't confuse with sweet peppers variety (raw for crunch) Walnuts lowest in carb (for good fats and variations from olive oil and avocado fats) pumping seeds and almonds in moderation are also ok. But i rather "save" the almond intake for pancakes etc using almond ultra-fine flour.
Green pepper are just unripe red peppers… I guess their carbohydrates haven’t developed? It’s funny to me to eat an unfruit just to avoid carbs and instead get a stomach ache! 🙃
Interesting challenge Derek :) I dont think it is healthy eating low carb in the long run, but maybe for a short time for loosing weight fast. Could you maybe make a video talking a bit about protein and if there is health risks associated with eating too much protein (even plant based)? We recently watched a documentary that mentioned a link between protein and cancer cell growth. I always thought plant based protein didnt come with this risk and have been eating plant based for 12 years or so. Love from Denmark

Your video was very interesting. Keto is not something I would ever do- the restrictions on fruit and beans seem very strange to me. But one low carb recipe I use sometimes is noatmeal. Basically a mix of nuts and seeds. I love oatmeal, and this is just something different.
Great video and great effort! I am not vegan or even vegetarian. I strive to eat whole food and avoid processed 'food'. I've tried every diet under the sun and that works best for me. That being said I do try to get the majority of my protein fats and carbs from plant-based food. I have never been a big fan of dairy and I don't eat a lot of meat. I don't eat meat by-products because I don't eat processed food. I have been watching you for several years and you have greatly helped me incorporate more plant-based foods and recipes into my diet which has been very helpful.
For people with some diseases like epilepsy, keto is live-saving. We need to stop making blanket judgments and statements. I personally don't believe keto is healthy. Reminds me of the 1980s and 90s "low fat" stuff. But again, to each their own!@@Simnettnutrition
I did keto years ago! Since I stopped. I’ve had 2 A/fib and my doctor told me my last one . I have 29% clogged arteries! I did low carb’ No carbs! I’ve eaten eggs for years! I’am going to try eating plant foods! This is so new for me ! I actually gave up salmon and ice cream! I need all the help with starting plant food! Thank you! I do oatmeal some days with blueberries ‘ cinnamon‘walnuts. Someday’s bran cereal! I’ll make myself a fruit smoothie!! Blueberrys’ banana’ pineapple’ strawberries . I just am stuck on ordering my food in restaurants! Besides salad’
A plant based based around whole foods will be the best thing for yah! Glad you found my channel. Sometimes restaurants are tough. Ask the servers, they are often helpful. Dr, Neal Barnard is a great resource along with Dr, Greger from Nutritionfacts.org.
I’m a 33+ year vegan but also diabetic. Diabetes was caused by over 9 years on prednisone for severe asthma. Ok, my point, how would this work for me. I still need to lose around 20#. I’m 79. The needed weight loss is for my back. Heck to get old. I walk one to 2 miles or more every day.
Check out ‘Dr. Neal Barnards Program for Reversing Diabetes’. I think your liver can heal after steroid induced diabetes, but that book (or talks on RU-vid) will teach you more! It’s a much better way to eat for diabetes than this. Higher fat low carb might keep your numbers lower since it’s not being challenged but what Dr Neal Barnard talks about will help you heal. And yes exercise use is key! Get moving, whatever you can do. Then push it a little further and harder when your body adapts. You got this!

Yes I looked at those!! Too many carbs for this video 😂 but I’ll definitely try them on my next shop. I’ve tried a few of their products and they don’t disappoint.
The yogurt breakfast probably didn't have as much calcium as cronometer said: it depends whether the yogurt (or the vegan whey) were calcium fortified or not. Also, you showed a vegan multivitamin near the end: according to Dr Greger, the B12 from multivitamins is not absorbed: you need to take B12 on its own, in chewable or liquid or sublingual form (it needs to mix with saliva), on an empty stomach.
This multi has only b12, d3, selenium, magnesium, zinc and omega 3s so it’s not quite like the ones with all the b’s and minerals. But good catch. And I input the exact yogurt I used. 👊
Your recipes are always very yummy looking. I don't do keto, but my friend was just diagnosed with stage f4 fatty liver cirrhosis and is looking to do a keto type diet to lose weight quickly.
It would be interesting to make also vegan variation of paleo diet for people who are allergic to legumes and grains for various reasons. So, you wouldn't need to eliminate fruits and vegetables, but find replacement for legumes and grains, mostly alternative protein sources, I guess. By the way, use nutritional yeasts for B-complex on keto diet. If you want higher potassium intake on keto then eat more greens and mushrooms. It's the highest density of potassium per grams of carbs.
1 avocado has like 13 carbs, we have to remember, it's still a fruit. 1 cup of sunflower seeds has like 20 grams of carbs. Then you combine that with sweet veggies like bells and carrots, it's easy to go over on the carbs. I'm not a fan of sushi, but If I wanted to do it keto and vegan, I would make natto rolls. Natto is low carb and high in protein as well as fiber, and is the best source of vitamin k2 in the world, and then use cauliflower rice instead of sushi rice. It would be simpler to make and lower in carbs.
Oh, Derek, you obvs weren’t trained by weight watchers like many of us, because we know it’s really dangerous to figure out the stats AFTER you’ve eaten the stuff… 😂 Some cool ideas and always a great vid, even though I’ll never do keto.

Nutriention labeles are often extremely inaccurate, sometimes pure oil is labeled as zero calories many times. The tomato package couldn't be telling the truth because most of the carbs in tomato are from sugar not fiber (natural sugar from whole food sources are good, i was just making a point)
Very interesting video! I know people who do keto and are often stressing about food, almost to the point of panic sometimes. Before vegan, I basically ate paleo and even that stressed me out, so I can't imagine keto! When it's so difficult for someone like you with so much knowledge about nutrition, it's no wonder it's difficult for most! You almost need a dietitian to help you do it right. Definitely doesn't seem sustainable for the average person. Now excuse me while I go eat lots of potatoes 😆
I did keto years ago! I did low carb’ No carbs! I was eating eggs and salmon for years! I’m willing to try eating vegan! It’ll be all new with me’ being on keto had me afraid of carbs!
