This unique recipe is perfect for vegans. Serve this curry with rice, bread or chapati (flatbread). You can use this raw banana paneer to make any paneer preparation such as bhurjee, tikka, pagoda or korma.
It offers a low cost, vegan, alternative to dairy. It is also a zero waste recipe as you can make cutlets with the banana skins. Here is the link for cutlets.
• Banana Skin Cutlets
For the Paneer
4 Raw bananas (fresh and green for best results)
2 tbsp coconut cream (or dairy cream for non vegan)
1 tbsp + 50 ml more coconut milk (or dairy milk or water)
3 tbsp plain flour or corn flour
1 tbsp rice flour
½ tsp salt or to taste
1 tsp baking powder
For the curry
1 onion
2 tomatoes
1" cinnamon
½ + ½ tsp cumin seeds
5 cardamoms
5 petals star anise
1 tsp whole black pepper
1" piece of ginger
2-3 tbsp oil
¼ tsp asafoetida or hing
½ tsp turmeric powder
½ tsp Red chilli powder (or more to taste)
½ tsp dhania jeera (coriander and cumin seed) powder
1 tbsp dry fenugreek
1 tbsp coconut cream (or dairy cream for non vegan)
1 cup water (or more) as needed
