Cantonese Style Vegan Sweet & Sour Pork
* Ingredients:
* For the wheat meat:
100g vital wheat gluten flour
¼ tsp salt
200ml warm water (30C)
1 tsp sugar
½ tsp dried active yeast (the type needs to dissolve in water)
Small bowl of all purpose plain flour for dusting and coating
* For the sweet & sour sauce:
1 tbsp cooking wine
2 tbsp light soy sauce
2 tbsp tomato ketchup
3 tbsp rice vinegar
3-4 tbsp sugar (depends how sweet you prefer)
2 tsp sesame oil
½ cup water
* For the stir-fry
3 slices ginger
¼ each mixed colour bell pepper
2 slices tin pineapple rings
Cornstarch slurry : 1 tsp corn flour mix with 1 tsp water

1 小匙糖
½ 小匙乾酵母(需要溶於水的種類)
1 小碗中筋麵粉,用作吸乾麵糰表面水份和防黏之用
* 糖醋咕嚕汁 :
酒 1 大匙
生抽 2 大匙
番茄醬 2 大匙
米醋 3 大匙
糖 3 - 4 大匙 (取決於你喜歡有多甜)
麻油 2 小匙
水 ½ 杯
* 小炒材料 :
薑 3 片
每種混合顏色的甜椒 ¼ 個
菠蘿圈 2 片
玉米澱粉漿:1 小匙玉米粉和 1 大匙水混合

Thank you so much for the response and support of the video. In regards to some of the questions about the temperature of the oven when the dough was put in there to proof with the hot water. 

Please note, when the dough first put in the oven with the boiling water, the oven is not on, the oven is only acting as a proofer (aka proofing oven, proofing cabinet, dough proofer, proofing drawer, or proof box).

 Proofer is a warm area designed to maximize proofing by keeping dough warm and humid. we only use the temperature provides by the boiling water to help the dough rises. Please do not turn on or heat the oven at all-the hot water will keep the closed oven warm and moist.
 Most doughs rise faster in a warm and humid environment. If yeasted dough isn’t allowed to proof, the yeast can’t release carbon dioxide, and the gluten won’t stretch to hold the air bubbles. 

Proofing is a step in bread baking that activates the yeast in the dough, although we are not baking bread here, but the proofing method helps the dough to create air pockets so the “meat” pieces are hollow inside, therefore, will be light and fluffy and will absorb all the lovely sauce during stewing, which is what we need in this recipe.

This is a great recipe! I especially like that it is vegan. I only cook plant based so I’m always looking for more recipes. I think my family will enjoy this. I make cooking videos too. I’d love to learn more from each other!! Never stop learning and growing!

How many degrees celcius did you have for the dough + boiled water?

Hi Jafaku, Thank you very much for your question. When you put the dough and the hot water in the oven, the oven is off, we just use the temperature create from the hot water to help the dough rises.
