Vegan Wonton Soup | Spice Oil: The Secret to Enhancing Simple Ingredients
Ingredients:
250 g wonton wrappers
For the filling:
100 g Chinese chives (alternatively: Napa cabbage or bok choy. Since these contain a lot of water, be sure to chop them finely, sprinkle with salt, and let the water drain out before continuing. Feel free to check out my video here: • Tofu-Rezept | Wie man ... )
100 g pan-fried or crumbled and fried plain tofu
10 g sweet potato glass noodles
For the aromatic spice oil:
1 spring onion
5 slices of ginger
1 tsp fennel seeds
1 bay leaf
1 tsp Sichuan pepper
1 small cinnamon stick
2 star anise
80 g peanut or rapeseed oil
For seasoning the filling:
2-3 tbsp aromatic spice oil
1 tsp salt
1 tsp sugar
For the wonton sauce:
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp nori flakes
1 tbsp chili oil (optional)
For cooking:
1 liter water
1 tsp salt
