True, rendam Tauhu in slightly salt water a few hours, fry it, and fry again together with the Masala so that Tauhu absorb the Masala. Taste better. Tq for the video, I am learning also.
I was about to say that too. Though I'm not a beginner; I'm not fond of frying my tofu (normally boil with a little salt) and I like to use boiled n squeezed-out fried tofu(to remove all the excess oil n to super soften the tofu) instead[ I use less hidden oil this way]. So tofu frying timing would be helpful... if and when I desire a slight change in the ingredients..

It gives out a unique (Indian) flavor n taste, though don't add too much; I like to add ulundhu too. Truly yummy, you must try it if you like buying mee hoon from an Indian restaurant. It's also healthy to eat; boosts your immune system.
