Can we take a moment to recognize Ben Ebbrell's brilliance at theorizing how to "lift" the dish (starting the rice, adding heat, adding texture) and doing the practical work, all while sharing his thoughts and opinions with the audience clearly and succinctly? Seriously, re-watch 8:16-10:37. All the boys are knowledgeable, funny, and charismatic, but Ben was amazing here.

You should do this with a separate room where anyone who's already gone goes and can watch a live feed of the rest, except for the last person so the finale is still a surprise. That way we can see their reaction to them messing up without being able to do anything about it.

It is wonderful watching Ben working, he’s so efficient and gives a reason for everything he does. I miss the old recipes he used to do explaining everything and just the boys helping, it’s like the teacher and his students.

I just realised, this was probably Jamie's best Pass It On, and he only gave himself a 5 (I thought he deserved a 7 or 8 for frying all those veggies and starting the actual curry), while others, where he was a disaster, he gave himself scores like 8.27 and 7.85

It's hysterical when he pretends to be surprised by something she says. if you watch all of the 'pass it on' videos to the end he admits that he is her in one of them. He does a variety of voices. Mike going first was such a great idea! His idea pretty much kept through the whole meal, down to the use of lemon grass by Ben *and* James using the bowl. Looks great!

As a molecular biologist, I hope you could do an educational series about GMOs and the nature of "organic" and "all-natural" foods in the same way you did in the gut microbiome video. Love this series, btw.

Shh_04 It is probably a good idea. My issue with GMOs are not about the process of how they are made, but my lack of trust in companies like Monsanto. It is a tool that is not inherently good or evil. If the goal is just profit, I worry. Golden rice is a great example of how good GMOs could be.

Although it would probably be a bit difficult on their part to consolidate all this information into one video + cook since the UK would probably have a different stance on GMOs vs. other countries, etc so they'd have to discuss laws and policies and history of GMOs which might be too much.

Mike got this off to a fantastic start! And the order worked out really well. I love seeing how far the “Normals” have come since they started taking the reins a little more. I’d love to see more Take 2s on old battles (sandwiches, pasta, etc.) because the pancake one was brilliant!

Actually, in Thailand we would mash that roasted pepper up, mix with some garlic and condiment, and served it as a traditional dipping Although, traditionally, the pepper is supposed to be green

I freaking LOVE this one. Mike started off strong KNOWING they were going to be fighting eachother's order of operations and got everyone going so the chefs could come in and whip things into shape. I looks DELICIOUS and I actually really like the charred pepper cause it's bright and eye catching and probably also super tasty!!

Tamarind is a nice substitute to fish sauce in Thai dishes when mixed with garlic, chili and soy sauce :)

it's a sub for lime or other acid, not fish sauce. it's very sour. if replace for fish sauce in a recipe with what you suggest it's going to completely change the whole profile of the dish and will be completely unbalanced.

Jonathon Fitzner yeah I might have gone a bit far in calling it a substitute :/ but I think that it does still work as a nice additional flavour when you don't use fish sauce, as long as you add a small amount and balance it out with sugar and soy sauce as it doesn't only bring acidity

Barry - i mean, we all know Jay - didn't add too much, but made good decisions James - balanced the flavors, made good decisions Ben - shaped the steps as a complete dish, added necessary aromatics to make the dish cohesive Mike - I gotta hand it to him, guys. I think this episode went well because he set up a solid base. They're not all too far apart in this ranking! Great efforts overall. A joy to watch.

This was a great episode! They all did good but I think Ben was amazing in this one! I had to rewatch his part twice because there was just so much going on and I didn’t want to miss anything.. It’s crazy how fast he thinks and works, and how he’s still able to explain everything to the audience so clearly at the same time. Bravo Ben, 10/10!
