THAI RED CURRY 🔥 MAKE IT. One of my go-to comforting meals. It’s a spicy and aromatic dish with a creamyyy texture. Can’t go wrong with its complex flavor profile of sweet and earthy flavors from coriander, cumin spices with fresh citrusy herbs like kaffir lime leaves & basil.
Recipe 👇
You’ll need-
✨Choice of veggies- I’ve used Diced onions, bell peppers, carrots, zucchini, broccoli, tofu
✨ Sesame seeds, basil 🌿 , garlic, Thai red curry paste, spring onions & coconut milk
Method -
1: saute tofu with some chili powder and set aside.
2. Saute all the veggies in sesame oil with some salt and pepper seasoning and set aside.
3. Now in hot pan, add some sesame oil (or veg oil), sauté chopped garlic and add 1/2 cup Thai red curry paste and 1 can coconut milk. Mix everything well and add the basil leaves or basil seasoning.
4. Now add the sautéed veggies and season with salt and chili powder (as per taste).
5.Add 1/2 cup veggie broth and simmer.
6. Add the fried tofu and season with some sesame seeds and some more basil. And you’re done ✅
Serve with hot rice and diggg in.
