3 lbs of pork belly/shoulder/butt - depends on the amount of fat you prefer
12 eggs (+ 1 tbsp vinegar, optional)
marinade:
4 smashed garlic cloves
4 smashed green onion heads
1 smashed shallot
3 tsp salt
3 tsp sugar
juice from 1/2 a lime (2 tsbp)
to cook:
2 cans of coconut soda (coco rico in green can)
5 c water
6-7 tbsp fish sauce (you'll want to adjust amount once the liquid reduces)
caramel sauce:
2 tsp sugar
2 tsp water (+ 2 tsp water once sauce darkens)
if you prefer a darker color, make more sauce but keep the ratio the same
