(ingredients below)
When I lived at home, this was a regular dish in my mom's rotation, and I was excited each and every time she made it!
Tofu and stuffing
-8-10 firm tofu (fried)
-½ lb of ground pork
-¼ cup of wood ear mushrooms (soaked in warm water for 10 minutes)
-½ cup of bean thread noodles (soaked in warm water for 10 minutes)
-3 sprigs green onion, diced
-1 shallot, minced
-2 garlic cloves, minced
-2 tsp of fish sauce
-1 tsp of sugar
-salt
-pepper
Tomato sauce
-3 large ripe tomatoes, diced
-2-3 c chicken stock
-4 tbsp fish sauce
-2 tbsp sugar
-1 shallot, sliced
-2 garlic cloves, sliced
-tomato paste (optional)
-salt
-pepper
Tips and tricks:
-if you like softer tofu, fry your own tofu and use medium firm instead of firm tofu
-braise for 2-3 hours for softer tofu and maximum flavor
