3 lbs catfish filets
1 - 12 oz can pineapple chunks with 100% pineapple juice
80 g of elephant ears
80 g okra or celery
60 g bean sprouts
4 tbsp tamarind pulp or 1 to 1 1/2 tbsp tamarind soup base power (adjust to taste)
2 c water to cover tamarind & squeeze
3 Roma tomatoes
3 c chicken broth
5 c water
6-7 tbsp sugar
6-7 tbsp fish sauce
1 tsp chili oil
5-6 minced garlic cloves
