Thanks Scott. I am excited to share my M10 Journey. It is different than the M2, that is for sure. Max capacity is a thing that is frustrating me. It isn't just Kaleido or Mill City, but all manufacturers sell their roasters as a 5k, 2k, 10k capacity. The reality is the drum can hold that coffee but getting great roasts are not on the radar. There is a sweet spot for these roasters. Many experts will say 70-80% capacity is the max they would roast. Any more and they won't make their intended profile. The M10 is no different. I did a 1 Kilo roast last week because I had to roast coffee for an event BUT didn't want to split the roast. The roast went a little longer than i wanted BUT that is because my charge temperature was too low. I'm still trying to learn the performance side of this roaster. This large roast was my first "large" roast. So I will need to increase my charge temp and see how hot I can go before getting roast defects. Don't get me wrong, I really like the M10 but my first attempt was not what I had hoped. I will share more about this in the future. I have roasted some exceptional coffee on the M10 but my batch size was 500 grams. So I think I just need more time behind the roaster to figure it out. My experience just kind of led my mind down the "max capacity" rabbit hole.. lol. Thanks for your comment and for watching Scott!

Thank you for your content. I am new to roasting and recently bought a Freshroast sr540. I used your videos as a guide and have been getting great results. I no longer buy roasted coffee but make my own. Looking forward to more Freshroast videos!

Congratulations Mike, for your channel and how you bring so valuable information for home roasters. I’ve been roasting in auto mode for about 2 years at home, using a DIY fluid bed machine. As you presented in one of your last videos, I would comment that I consider that in a drum roaster it shall be much more difficult to set the PID controller parameters, because of the temperature inertia. There is a significant delay between power switch and temperature response. I would like to see what follows that. It would be great to follow that experience and other auto roasting mode experimentations. Thank you, I wish you the best and much more nice videos in 2024.

Hello Marcio. Thank you for your suggestion. I do plan on more "auto roast" type content. Since my last "auto roast" video, I have learned how to use the temp change events to control the PID. This ROR has smaller swings because of the constant temp changes and the overall experience was much better. I hope to show this in a future video. Thanks for the encouraging words. @@VirtualCoffeeLabThanks for all your helpful content and tips! The Bullet is my first roaster. I've had it for a bit over a year now. I tend to roast just a couple pounds a week on average. I'm pretty consistently now charging 500 gram batches and my roast times range roughly from 9-11 minutes depending. I prefer the lighter end of development. My weight loss hovers around 13 percent. :)

Very cool! Good bode of confidence that you enjoyed the M2 enough to jump on an M10 for good! Congratulations on the M10. I have been using my new M6 for about a month now and loving it. Quite as step up from my Behmor although that was a great starter roaster, Looking forward to what you do with the M10.

Your channel is one of the best. The content is always helfpul. Excited to see your videos on the M10! Also, a video on roasting for espresso vs filter would be cool. I know some do omni roasts but many probably still like to do espresso focused and filter focused roasts. Keep up the excellent content👍🏻

@@VirtualCoffeeLab honestly, I don't really follow other roasting channels as much as I do yours. I just sort of browse what I need to find for my set up (the M10). When I first decided to get into roasting I watched mainly Mill Citys videos. They were very informative. But I really haven't found much better for roasting than yours and Mill City's.

OK, that's interesting. I have talked about strengths and weaknesses of the various roasters but not necessarily focused on what type of roast styles might be best suited for a particular roaster. Noted.... With regards to a beginner series, The "Secret Sauce of Roasting Coffee" was an intro or sorts. Can you be more specific?

Compare pre and post roast coffee density. Dig into this. Same roast level with a fast vs slow roast. Finished density should be important? Anyway, please start collecting this metric and see what you make of it.

I have the M10 and this is something I began investigating. But I can't get enough data since I roast to my taste. This limits my data. In general long roast produces a less dense final bean than a faster roast to the same final color. I like light roasts and find that stretching the roast (development time) causes loss of varietal flavor and much of the aroma I enjoy. I do think it is important for a better understanding of the final product and comparison of roast profiles and roasting equipment results. All cinnamon roasts across various machines vary widely. Can these cinnamon roast flavors be predicted if end bean density is known? It became important when I noticed the same light roast Ethiopian Guji coffee from 3 roasters weren't the same. My preference had a higher final bean density. I could produce this result at home with beans from the same origin, roasted in manner that closely matched final bean density. Trying to roast to the same color over a longer time matched the (budget coffee roasters product) not the award winning product. Final density is my method of comparing apples to apples.

Thanks for the clarification Victor. Honestly, I can understand the benefits of measuring density when comparing the exact same coffee. So, the same coffee from batch to batch. I don't see the value (yet) comparing roasting density between different beans. Wollf and others seem to use roasting density to help them maintain consistency (quality control) within their production. I'll look into this more as I roast Victor. Thank you for sharing this interesting metric.

More detail on DIY would be great. I will attempt to keep my Behmour going as long as practically possible, I love it, but should it fail beyond repair I would like to DIY my next machine. Reason being here in New Zealand coffee roasters like lots of stuff here are very expensive.

I started with a heat gun and Flour sifter then I switched to a bread machine and that worked really well. I now roast on a Kaldi fortis 600g

@@Stevesbe Even a new Behmour would cost more than I wuold be prepared to spend. I have yet to come across a budget home roasting machine that would suit my needs. (I am talking sub $700nz) If anyone has any knowledge of a good DIY roaster that can knocked together in my shed and roast good coffee let me know. That is a tall order I know !

@@VirtualCoffeeLab I'm not sure, it may have been done already but it amazes me no one has built a quality low cost "effective" coffee roaster. You could say that is the Behmour, bullet, etc as you can only shortcut coffee roasting to a point, beyond that you are not unleashing the magic from the bean. Its a fine line.

Topics that would be interesting: Roasting, for different methods like espresso or v60. ( DIY)roast meter and how to use it to improve. Unfortunately, for now, I don't have access to a Gene Cafe, so no more videos on the horizon for that roaster. Sorry about that.

I would love to see a video or two on how to use the M10 with full auto-roast. The Kaliedo version was more of a plug it in and watch the ROR do a crazy dance. But maybe work in Artisan and get it really dialed in so it won't create peaks and crashes, but a nice and consistent roast. I think the M10 is capable and I would love to see you do that.

There will be M10 videos and we will do some Auto Roasts. Some of the ROR can be smoothed but it is always helpful to see how the probe is seeing the temperatures. More on that in a future video. Thanks for sharing Nick and for watching my videos.

Love your videos! I think it would be fun to roast coffees from different countries or perhaps compare coffees from different processing methods. Also, I roast using a Whirley Pop on a cast iron skillet. Home roasting doesn’t require expensive equipment to get good results. I think some people are turned off to home roasting because they think it requires buying an expensive roaster. Not everyone has the space (or money) for such a specialized “appliance.” I use a lot of your principles in my roasting using a Whirley Pop and I’m a better roaster because of your videos. Thank you!

@@VirtualCoffeeLab first I used an 8 cup flour sifter and made a stand to put the heat gun under it. Plenty of info and pictures or there. Next I got a free bread machine and got rid of the Teflon coated pan and used a stainless one .A good heat gun with temperature control helps. The bread machine can do close to a lb the flour sifter about 250 to 300 grams

Hey, I really like and appreciate your videos - I'm a new roaster and new to the process, but am enjoying experimenting and adjusting my technique and such. Do you have a video summarizing how taste/smell of the final product can inform you, at least generally, about the errors you made during the roast? I'm looking for sort of a graphic organizer for the three phases of roasting, something like "In the drying phase, if you roast too slow you'll taste X, too hot you'll taste Y, too long you'll taste Z etc." Not sure if that's something you've done or if you could direct me to a resource with that already, but it would help a lot to have a go-to chart if I end up with a coffee that tastes like cardboard and want to know exactly what that says about what went wrong in the roasting process. That is a good suggestion. Many of my roasting videos show me smelling and or talking about the aroma during the roast. Usually I mention these around the dry event, first crack and especially during development. I don't have a singular resource. Sorry about that. I am currently working on a series related to the roasting profile so I think this would be a good place to reference aroma and taste in this series. I will see what I can do. Thanks for the informative videos. I am a new owner of a Kaleido M10 and have found the transition from my Huky 500 gas roaster challenging. I have been frustrated that my BT temperatures at first crack have consistently been 15-20f less than what I expected. Thinking the probe calibration was off, I poured beans at 350f into a thermos bottle and compared the BT probe to a Thermapen. The Thermopen reached equilibrium in about 10 seconds while it took the BT probe about 2 minutes! I am very anxious to see your upcoming videos on the M10.

What was your charge, dry, fc, and drop temps with your huky? Helix, the M10 is a great roaster. Don’t let the temps trouble you too much. First, make sure you have the correct Kaleido machine setup in artisan. There should have been a screen that asked about capacity. You should have entered 1.2 If that Did you buy the M10 roaster from espresso outlet? Contact the seller you got the roaster from and ask about the probe placement.

@@VirtualCoffeeLab I generally charged at 400-420f, DE at 315f, FC at 385f and dropped at 400-425 for a 10 minute roast. Peak RoR was 40-50 deg/min. ending ~10-15. For the M10, the Artisan setup was Config> Machine>Kaleido>Serial and 1.2kg.

ok, that makes a lot of sense now, Alan. What you are experiencing as far as temperatures go is normal for the M10. Don't be concerned. Are you using Artisan or the Standard Tablet? How much coffee are you roasting per batch?

Videos are all great,,I always look forward to them....would like to see more tasting results or followup on different coffees and different roasting parameters ie: 12% vs 15% vs 20% on same coffee.... I use a Razzo extension on my Fresh roast which seem to generate more heat ,,,I usually hit FC at 400 degrees bean temp.....maybe you could get your hands on the Razzo extension to compare with the Fresh roast extention tube,,,,I seem to get a lot of bean movement at Air setting 8..never go above it,,, SR800 seems to run hotter than the SR540,,,most of my roastings start at fan8,,,Heat 7...obtainting dry phase right about 360 degrees and 4 min...I try to keep overall total ice around 10 min.with dev at 15% I Usually only reduce fan speed and keep heat at 7, Thanks Mike

Love the style and content. But I don't know how to get a question to you. It may be best for an Artisan Scope/community but I have not mastered that yet. I see some, like I have seen you do, with a manual roaster in the buttons/events we can change line styles, dots but what I'd like to do is drop the text (maybe 2 characters) into the point so that it's easier to read from the control steps. I don't want to get you off mission but I want this - I swear I have seen it done. But fiddling and digging I hit a dead end. Any help or if any of your loyal watchers know - can y'all help an old man out? Maybe there's a sharable link somewhere. As far as ideas for your content - just what you have been doing is great.

@@VirtualCoffeeLab - I found it and it was under events - it's a "combo" on the type. I don't know how I missed it. I may have been focused on the "buttons" Artisan blog post and not read carefully enough to see your link was different. As I said, I had been there done that and even used the flags on the curve bit. we can misread things like "Dog is man's best fiend."

Please accept my apology if prior video or prior post of yours exists for following request. Those seeking to home roast and beginner home roasters may find helpful a written listing (or one video) describing the different types of roasters. For example a list with common examples of each roaster type and/or listing categorizing each roaster you have prior used on this channel that are convection only vs.conduction-only, convection & conduction; also which are drum roaster or fluid-bed roaster.

Thanks for the suggestion Michael. I think a central list would be helpful. So for hear on RU-vid, maybe I could do a video and highlight the various roasters and provide links in the description, categorizing them by type. I do have a "Live" video that kind of does this here ru-vid.come4q6rC6k3AQ but it isn't in the "video" part of my channel. It is in the "live" part and can be easily missed. I do try and group my videos by both roaster and by series. So I have a kaleido roaster in my "secret sauce to home coffee roasting" playlist as well as my "kaleido" playlist. Thanks for the suggestions. I'll try and do that.
