Crispy Veg Rice Cake/Patties
Servings-4
Ingenious
-2 cups cooled leftover rice
-1 cup boiled corn
-2 boiled potato
-1/2 zucchini
-1 carrots
-10 small garlic chopped
-2 green onions
-1 Amul cheese cubes (vegan-skip)
-1 tbsp soy
-1 tbsp world sauce
-1/2 tsp freshly ground black pepper
-1 tbsp tomato ketchup
-1 tbsp sriracha sauce
-1 tsp chili flakes
-2+2 tbsp butter
-5 tbsp oil to fry
-3 tbsp stir fry veggies
-1/2 cup milk (vegan plain almond milk)
Step-1
-Heat oil in a pan/skillet over medium heat add chopped onion & garlic sauté until slightly browned
-Add carrot, zucchini, boiled corn stir for 5 minutes
-Turn of the flame allow to cool
(Step-2)
-Microwave potatoes 2 seconds & mush potatoes, add milk, dash black pepper & salt, 2 tbsp butter mix well add to (step-3)
(Step-3)
-Mix in a large bowl add cooked rice, mashed potatoes, sautéed veggies, soy, ketchup, sriracha sauce, chili flakes, Amul cheese
Mix well to combine all the flavors
-Cover bowl with plastic wraps and refrigerate at least for 30 minutes to 1 hours.
-Before frying remove from the fridge mould into small lime size balls and flatten with your hands
-Heat oil in a large pan (4 tbsp) over
Medium heat and fry patties until lightly browned & golden
-Serve with tomato ketchup or hot sauce with clear soup & salad.
