Perfect for cake filling
80g Dark chocolate - 50% to 70% cacao
100g All purpose cream
20g unsalted butter
Melt in microwave for 1 minute and slowly stir until incorporated ( 2 to 3 times)
Cover with plastic wrap and keep in chiller for overnight.
YIELD: 200g , good for 1 cake in can 6" x 2" height.
