Abby’s Lunch
GREEN BAJRA ROTI
4 green beans
6-1 palak/spinach leaves
4 tbsp zucchini grated
6 tbsp carrot grated
3 spring coriander leaves
2 cup of filter water
Dash turmeric powder, cumin powder, fennel powder
1 cup mixed Bajra(pearl millet) flour, Wheat flour (or as required)
1 tsp organic cow ghee
-Blanch spinach, beans, coriander stems (reserve cooked water) add to a chutney grinder roughly blend add little reserved
Water
-In a mixing bowl roughly grounded green paste of (Blanch spinach, beans, coriander stems) , grated carrot, zucchini, cut coriander leaves, mixture of Bajra & wheat, cumin, turmeric, fennel powder, organic Cow Ghee
-Make a dough add enough cooked water & flour to get right dough consistency, Let the dough rest for 30 minutes
-The dough needs to be soft & pliable if the dough feels too wet/sticky add more flour
-Roll dough ball to a smooth ball and roll evenly using a rolling pin
-Heat tawa before you add the rolled roti, cook both sides add ghee cook till done.
-Break into small pieces & serve
-Don’t forget get to give plenty of water
KHICHDI
-1 Tbsp mix rice & moong dal soak for half an hour
-3” carrot crated
-2 green beans cut
-2 curry leaves for flavour
-1 tsp organic cow ghee
-dash turmeric & cumin powder
-2 tbsp pumpkin small cubes
-1/2 water
-Heat pressure cooker add ghee stir curry leaves, Carrot, beans, pumpkin cook for a second, add rice, moong dal add water close the lid and cook 2 whistles or until
done
-Roughly mash with a fork
-Serve warm
-Don’t forget to give plenty of water
