Recipe/Ingredients:
Vegan omelette:
240g water
80g chickpea flour (Italian)
1 tbsp olive oil
1/8 tsp salt (kala namak)
Yield: 2 omelettes (approx. 7 1/2” diameter)
1. Mix all ingredients (except salt) and let it rest in fridge overnight.
2. Add and mix in salt prior to cooking.
3. Cook over medium heat with some olive oil. (approx. 5-6 mins each side)

Fried rice:
400g rice (cooked)
170g onions
140g tofu (extra firm)
80g carrots
50g peas (frozen)
3-4 tbsp ketchup
2 tbsp tamari (gluten-free soy sauce)
Extra salt (if needed)
Yield: 3-4 servings
1. Chop onions, carrots and tofu. (small cube-like pieces)
2. Cook onions, carrots and peas over medium heat with oil approx. 4-6 mins.
3. Add and cook tofu until heated through.
4. Add rice and cook approx. 2-3 mins.
5. Add tamari and cook approx. 2-3 mins.
6. Add ketchup and cook approx. 1-2 mins.
