I believe this is misleading people in the worst way. Kobe is a city in Japan, and Wagyu is a cattle breed. Also, Ben Blackmore is raising full Japanese Wagyu.
I had the Wagyu beef at Caesar's Palace Bacchanal buffet. Being from a beef state, I wanted to find out more about this type of beef. I was not impressed. I kept spitting it out because of all the fat in it. I think the Asian preference is different from Western taste. The beef texture was so tough and reminded me of a tough roast beef with chewy interstitial strings of connective gristle. Once my teeth chewed off the meat from each bite, I was left with a gummy bolus that wouldn't break down, and I had to spit out. I even had the chef grill it more but that didn't help. I did not find the beef to be tender or buttery as Wagyu beef is described in the definitions I found. Like I said, this was my experience and description. I'm sure other people would like this type of meat, but this was my experience
