This simple recipe will teach you how to prepare brinjal mojo. This is a popular dish in Sri Lanka, and everyone enjoys it. It takes less than an hour to prepare. When refrigerated, it can be kept for 2 weeks.
Ingredients
Brinjal - 500 grams
Onion - 150 grams
Green Chillies - 50 grams
Garlic - 3 Cloves
Curry leaves - 2 Stalks
Oil
Salt to taste
Turmeric powder - 1/2 Teaspoon
Fennel seeds
Mustard seeds
Fenugreek seeds
Pepper
Tamarind water
Sugar
