Try ADOBO (UH-DOH-BOH), its pork & chicken stewed in garlic, soysauce and vinegar, Dalena will love that im sure! It's what I'll call Filipino Soul food. Also you should have tried the REAL Filipino dishes on the Menu, the SINIGANG (sour soup) & SISIG 😊. and BALUT (BAH-LOOT) if available, balut is a soft Boiled egg but with a small chick inside. You can skip eating the chick inside if it creeps you out, but the broth inside the egg is delicious! Those are the dishes worth calling Authentic Filipino. 😉👌 If you get to visit PH, look for CnT Lechon, Ayer Lechon or Rico Lechon, those are my top lechon brands! Dont try Zubuchon even the locals doesn't like that brand haha.. It was sad Bourdain only got to try one brand and he thought that was already the best.

Filipino foods are usually made to be eaten with rice, like in the same bite! We have foods specifically called "sud an" which is basically "a dish accompanying rice", and it's usually some kind of meat. We use spoons and forks instead of chopsticks so we can heap "sud an" and rice in the same bite. This is why the flavors are so salty and strong by themselves, they're made to be balanced out with rice. Glad you got to try it out!

Love the crackle of the lechon kawali! ❤️ The brown sauce is normally paired with lechon, grilled /fried pork and chicken dishes. The pork barbecue skewers are usually dipped in a spiced vinegar sauce. If you get a chance to try out other Filo restos, please do so - and try to get recommendations from Filo friends or the restaurant owner. The food you ate are mostly grilled and good for breakfast (tapa, bangus). I was looking forward to seeing you try the salmon belly sinigang - traditional sour tamarind soup which is cooked wth either pork or seafood 😊

Here are some reference for you guys. Brown mysterious sauce = Sarsa (popular brand is Mang Tomas, otherwise it is a home cooked pork liver with varying spices) Lechon = the one you ate is called "Lechon Kawali". The one you might be looking is simply called "Lechon" like the pig suckling you described in China. Not sure about the taste difference since I haven't tried the Chinese version. Bangus = Milkfish. It has a lot of tiny fishbones if they don't de-bone it. I LOLed at the banging and it sounded like Bang bus. Halo-Halo = Famous Filipino dessert. Halo halo literally means "mix-mix" so you have to mix everything before consuming it. We do have spicy dishes although limited compared to other Asian countries. Our spice levels might not also compare to India or Thailand, but we're no slouch when we cook spicy foods. Most of Filipino dishes are on the salty, sweet, and sour side, and our dishes are basically influenced by many nations - Chinese, Asian, American, Spanish, etc. so some might resemble a dish that looks similar to their cuisine, but the taste is authentic Filipino. We also have bitter and spicy ones ^_^ Not sure how sweet tooth Dalena can be but our sweets can be really sweet. Food Suggestions: 1. Pork Sisig (a true Filipino delicacy and 100% Filipino) 2. Kare-Kare (Beef oxtail usually but better ask the resto since pork is also used, indian inspired food - not spicy) 3. Chopsuey (mixed veggies, Chinese inspired dish) 4. Lechon (Spanish influence) 5. Bicol Express (pork dish, spicy food) 6. Sinigang (it could either be seafood, pork, or beef - sour type dish) 7. Durian - must try fruit. no clues haha! 8. Balut - must try evening snack. no clues too!

FUN FACTS: Beef tapa is dried cured beef and it's generally eaten for breakfast or lunch partnered with garlic rice and fried egg (called as Tapsilog)... Bangus is called Milkfish in english and it's often served grilled and topped with chopped onions, tomatoes, and chillies... Sisig is made of parts of pig's head like the ears and snout (but some filipinos use pork meat and fat) most people enjoy having a sizzling plate of Sisig with a cold beer... Sinigang is a tamarind sour soup or stew with meats or seafoods and veggies in it and best eaten with rice. It's like a comfort dish for filipinos.

The brown sauce is a liver sauce mostly used for fried chicken, roasted chicken or pork, lechon. Mang Tomas is one of the famous brands of liver sauce here the Philippines. The lechon that you ate is lechon kawali, and the other lechon that we have is a roasted suckling pig. A good tapa would cost around 1.5 to 2USD. Bangus and roasted chicken would cost about 2 to 3USD. Skewers, which we call bbq, would cost 0.5USD per stick 😊

Hi, Dalena & Chonny! I'm so happy you two both got to try Filipino food! The prices are quite high compared to the PI. Typically, where I live (which is Saipan, CNMI that has plenty Filipinos), pork or chicken BBQ stick is only $1 each. The beef tapa is called "Tap-si-log" because Tap is from tapa, Si is from Sinangag= fried rice, & Log is from Itlog= egg. It's typically a breakfast food, where the meat can be replaced. Such as hotsilog= hotdog or Longsilog= Longanisa. You should also try the sisig! It's fried pork ears, but I PROMISE you it tastes delicious! There's also Filipino spaghetti, bicol express, sinigang, and so much more food to try! As well as deserts like Halo-Halo (which means Mix-Mix), leche flan, etc. Have a nice day! :)

Most grilled or fried meats are eaten with a vinegar dip. The brown sauce is a liver vinegar sauce meant to go with the Lechon. That is fried, you must try spit roasted as well. Most Filipino food is a combination of salty, sweet and or sour. Only certain regions are known for spice and the further south one goes, coconut milk is used more liberally. The fish is probably marinated in vinegar, known for the soft meat but is notoriously boney. For fish bones, try eating a banana to dislodge it. If you go to PI, the southern region (Cebu) is known the best Lechon. A specific town called Carcar is the place to go, also known for pork rinds.

Bangus or milkfish is the national fish in the philippines. The best part is the bangus belly! Pork lechon kawali is boiled with spices and deep fried to perfection it goes well with that liver sauce and atchara ( pickled veggies). Were regulars at GJ grill, they usually have halo- halo in there. It’s a good thing you enjoyed your first filipino meal here in melbourne. Try here in burnsdie heights ( west side) they have filipino resto as well and they have boodle fights for big groups of family.

The sauce is a liver sauce and we call it sarsa or sauce in english its like a gravy but sweet its become a tradition to pair it with lechon it is because when the sellers of lechon cook the whole pig they didn't know what they gonna do to the organs so they decide to make a sauce from it😊 And the pickle called "achara" which is pickle green papaya & carrots. The "beef tapa" is not always tough maybe they not cook it properly😂✌ The fish is called" Bangus" or in english "milk fish " and its pronounce as ba-ngus not ban-gus😅✌✌ usually its a grilled milkfish stuff with tomatoes&onions usually eat with rice or cold beer😊 and you need to squeze the lemon on the top of bangus ☺ The tomatoes&onions is like a salad for your pallet to balance the saltiness greasy and fattiness of the fish ☺and filipino food is about sauces our food is very simple that all the people can cook it and eat it because we love cheap prize😅😅😂✌ so everybody can afford it. And speaking of the sauces here in the philippines if you have salty food you always need to have a something like sauces to balance the flavor. sweet & sour sweet.& savory sweet & salty or all of the that in one, we always have sauce to contrass and balance the flavor of the food so our food is very simple not so special but sometimes being simple will make you special😊☺💕😅 and also i want to say that the prize haha not so good hahaha thats a lot cheaper here in the philippines way more cheaper because that food you usually gonna saw it from the street😂😅✌✌ And If you come here in the philippines we have a lot wierd combination on food like cheeze on dessert 😂and manymore☺😊👌

And the Bangus is Milk Fish. It's very boney which is why you often see it advertised as Boneless Bangus na Daing (which is salted and dried to preserve it, then fried before eating) which is why it is firm. And Dalena is right on in terms of the saltiness and the need to eat it with rice.
