We are harvesting potatoes from our experimental hugelculture mound and we are super surprised by the amount we got. We’re also harvesting our beets and carrots, checking on the pigs in their new forest paddock, and making chicken pinwheels for dinner.
Today’s music, in order (available through Epidemic Sound bit.ly/2Mt3tXm ):

I'm sure it's too late because I'm sure the video is days old. But next time you cut off the carrot tops, dehydrate them and use them almost like oregano or basil. Oh... and I have to share with Meg. I turned my Mom onto The Hollar Homestead years ago. She literally was enthralled with you guys. She even went back and watched every single video you made. She ordered some of your soap and was so tickled to death about it. Unfortunately, she passed last August. I've been cleaning out her house and today I found 2 of the 4 bars of soap she ordered from you. I'm now the proud owner of 2 bars of Bumblewood soap. I can't wait to try it. Love you guys!

This year I have found the Coast of Maine soils and composts to be the best I've ever used. Have been so disappointed with the other brands which have turned out to be just bags of shredded wood that has not been composted or cleaned. Have lost many seedlings to crappy soil. So it was refreshing to see what's in Coast of Maine thriving.

Yea Maine!! 💚🙌🏽 Proud Mainer here!! 👋🏽 Coast of Maine has great products! So we run a horse farm here in Maine and take our manure to a compost facility about two miles from our farm. Bensons Farm. They make the absolute BEST compost called Surf & Turf. I adore it for my gardens! Fun fact.. they recently took a humpback whale that washed up passed 😢 in our local harbor to their facility to compost. They use so much seafood shells/ waste, coffee grounds, animal waste etc.. it’s an impressive facility/ operation!!

Ben and Meg ❤ Making smashed potatoes of the tiny potatoes is perfect . Just cook them for 5 minutes unpeeled of course. Lay them out on a heavy buttered sheet pan and smash them with the bottom of a glass. Lots of salt and pepper and some garlic power and sweet paprika powder . In the middle of the oven at 390 Turn after 12 minutes and add more spices and cook in the oven for 12 more . Maybe longer , depends on the oven , they are supposed to turn out really crispy round the edges and soft in the very middle😊 Some freshly cut chives on top before serving is the icing on the potato cake😂 One of the best potato dishes ever ❤ I love it with a whole pork loin wrapped in bacon, some fresh green beans sautéed in garlic butter. Creme fraise with herbsalt and chives to dip the potatoes in. Maybe ranch will be preferred by most Americans 🙃 I Hope someone in this comment section will try this for dinner one night. May I suggest a blackberry cheesecake cobbler for dessert. If you don’t know what that it. Just make your normal cobbler You just cut cold plain Creme cheese in small squares and add the bits random on top like the blackberries ( or other berry or fruit if you prefer) Some cinnamon and Demerara sugar on top before cooking vanilla ice cream on the side.. 😅😅😅😅 Yeah.. making myself hungry.. I know what I’ll serve my next guests now, haven made this in a long time, but all of it is amazing ❤❤❤ I love you guys so much!! 😊😊

So beautiful! Meg, your chicken pinwheels look delicious! Nice haul of new taters, carrots, and beets. I love to roast root veggies. The beets turn out so sweet. I've got the large Pampered Chef sheet pan, and I fill it full of cut up beets, carrots, sweet potatoes, Irish potatoes, onions and garlic. Drizzle a little olive oil, salt/pepper, and a touch of dried Italian herbs, then bake until tender. Roasted root veggies are so good...beets are my favorite though cause they get so sweet! P.S. You can grow pretty much anything on hugelmounds, though it is often argued by proponents to rotate in that section you've grown potatoes this year, grow beans/peas or berries in the spot next time out, potatoes can given their nature as a root vegetable damage the layers within the mound so its also worthwhile "repairing" the layers, but are quite demanding on the nutrients within it. Also dont forget the mounds themselves only last 4 or 5 years before you need to rebuild it from scratch.....

Carrot tops make a great pesto. With some garlic, chopped cashews(unsalted), olive oil, lemon zest, small amount lemon juice, a bit of salt and grated Parmesan cheese. Is great on pasta or roasted meat. Grilled cheese, or on fish, on a rice.bowl, a great way to liven up a roasted veggie dish. Many ways you could use it. Mix with artichokes or cheese and make into a cheese dip or spread

Not sure if those are onions or garlic flowering in your hugel, but you should harvest the seed if they are onion. If they are garlic they are called bulbils, they are not seed, per se but actual clones of the garlic they grew from. Gather them after the flowers are open and the papers on the bulbis seem dry. Plant them in a trench when you plant the rest of your garlic. The first year you harvest them you will get "rounds" or individual cloves. The next year you plant them like regular garlic and you will get small heads. After that just plant the largest to get bigger heads. Just make sure you mark your bulbis trench, they look just like little blades of grass, I've ripped out quite a few pulling weeds

Buggy is so funny and cute and she seems to be getting taller. I love when she spontaneously breaks out into song.
