For a mirepoix, another way to save time with the fine detailed chopping and knife work, you can roughly chop the onion, carrot celery and garlic, then add the ingredients into a small blender and give it a quick blitz ... or just add the garlic and onion to the blender if you want the carrot and celery chopped bigger.
