I'm glad you like the Kerrygold cheese! I grew up in Dublin and have lived in Vancouver for 40 years and friends always laughed when I bought it until they tasted it. Those grass fed cows produce creamier milk and more flavourful meat and it's much healthier when the cows are grazing instead of being stuck in feedlots☘🌿

Great video!! I'm 70 and during Covid I started following the Mediterranean Diet as I did need to eat healthier. Really enjoyed it and stopped eating red meat and pork, primarily ate turkey, chicken or fish. Did combos of vegetables that I had never thought of doing before as I wasn't a real fan of veggies before. Had my scheduled colonoscopy in 3/21 and they discovered I had diverticulitis and then I had my first flare up in Spring 2022...so now trying to find a happy medium between enough fiber in my diet to keep myself healthy with no flare ups!! Started a prebiotic/prebiotic to help things along...I will tell you that the 70's aren't as easy as the 60's so glad to see that you are healthy and happy!!

Try some everything but the bagel seasoning on your egg & avocado toast. It takes it to the next level. I actually like the Mrs Dash Everything but the Salt best. Some of the seasonings can be rather salty imo. You showed a good selection of healthy and convenient options.

Everything looked delicious, I try and eat the rainbow at each meal as well. Hopefully the snow didn't stick around for long. We've been having unseasonably warm weather lately and haven't had any rain in months, which is unheard of here. It's usually a rainforest, lol. Our winter's comfort food is pea soup with smoked sausage. And in the fall season usually grilled brussel sprouts / chicory with balsamic vinegar served with fluffy couscous. I like your content about rainbow bowl, definitely will see more ☺️

I love these quick and healthy meal ideas, thanks for sharing them. IMHO the broccoli was not over cooked, the char is all the roasted flavor goodness!!! Also have you tried TJ's Zoug sauce? I like to add rice and greens to a bowl of Roasted Red Pepper soup and and a big spoonful of Zoug on top- it's delicious!!
I noticed that you used a cast iron pan for breakfast isn't it a chore to wash and then reseason plus the handle gets hot as I love to use mine but i only use it on the weekends when I have more time to maintain it as I usually only use cooking spray and that isn't the best for it as things still stick on the pan. So I usually just use a stainless steel pan.
I love your recipes. I, especially, enjoy the Ezekiel bread. I had never tried it until you mentioned it on your videos. It is so tasty, like no other bread I have ever tasted. Love your channel!
I used to buy the same soup from Trader Joe's, but now I get an 8 pack at Costco which is also organic and taste the same, for 1/2 the cost. It sounds odd but it's really good with pasta - half regular spaghetti sauce and half soup.
We eat pretty much the same, except we don’t have Trader Joe’s nearby. Pro tip: I dunk my grilled cheese sandwich into tomato soup! That may sound barbaric but I don’t care. Lol. Weather is crazy…you have snow and it is 85 in Portland, OR.

Just outside of Minneapolis MN. It is unusually early for snow, it melted pretty quickly...we won't see much accumilation until sometime in November or even December.... Although in 1991 we had a Historic Blizzard with a couple feet of snow on Halloween that lasted till spring!

If I'm lazy I pick up ready made bottled Honest Tea...I recently picked up the green tea bags from Target House Brand Good and Gather and was surprisingly good!

Could I ask you a question. Everyone used to eat Oatmeal for breakfast. But now it seems to be avocado. I Is oatmeal no longer the thing to eat? I know you're not a nutritionist, I'm just curious.
I figured I'd give an answer since I saw your question for whatever it's worth. I've seen plenty of "influencers" and health people on RU-vid making oatmeal for breakfast. However it is no longer plain or the sugary packets. It's usually organic and they add berries, dark chocolate or cacao chips, shaved coconut, granola, peanut or almond butter to it maybe honey or pure maple also.
I actually love Oatmeal and do make it often in the winter. I like to add apple and walnuts and flax meal and a drizzle of maple syrup. I've also made overnight Oats by just mixing raw oatmeal in with yogurt and fruit and letting it sit overnight, but I prefer the cooked version.

Ha! I own all the books you listed here too. I really love Dr. Fuhrman's philosophy, but do add some animal proteins occasionally too. What healthy meals, so it's no wonder your skin looks so very fabulous.
