college life has been getting busier and busier, but plant based (ish) meals like these have been getting me through the days when all I do is sit at my computer 👩🏻💻what i eat in a day varies from day to day but these quick and easy recipes has been some of my go to's lately! hope these recipes bring you some inspiration to get in the kitchen and have some fun, and pls let me know if you tried any of these!
BREAKFAST
crispy rice and egg:
chilled/leftover rice
cucumber
white wine/rice/apple cider vinegar
salt
peas
eggs
coconut aminos/soy sauce
garlic chili crips (found at most asian grocery stores)
LUNCH
chickpeas salad sando:
1 can of chickpeas
half red onion (diced)
1-2 celery stalks (diced)
olive oil
salt
half avocado
1/4 cup cilantro (roughly chopped)
half lime
2 slices of sourdough (lightly toasted)
DINNER
vietnamese soup
half white onion (thinly sliced)
5 cups water
1 inch nub ginger (sliced into matchsticks)
1-2 tbsp fish sauce (season to taste)
1/2 tsp salt
rice/buckwheat/wheat noodles
firm tofu (cubed)
green onion
jalapenos
cilantro
hoisin sauce
sriracha
