When you cook veggies over a certain temperature (each veggie is different) it usually over 120 degrees, especially cooking it in oil or butter which are not good for your gut and overall health, you are basically killing the nutrients making it “dead” food. Hi, good question! So in my opinion and the way my body feels, sometimes I feel sluggish after eating cooked food whereas days when I eat fully raw or partially high raw. Also, lots of times, we tend to over-cook food and put too much heat heat which reduces or completely depletes medicinal properties of the food, collard greens during American thanksgiving time are a huge example of this. So yes, cooking food definitely breaks down certain foods (obvious ones like beans and less obvious like spinach), but its important to give the body a break from constant heated/cooked foods and reap the benefits from foods in their natural state. Plus, at the end of the day it all boils down to eating raw and feeling the difference for yourself!
Cook foods make it harder to digest bc are adding things to foods stop down the natural digestion time. For example. eating cucumber, they digest very quickly, but adding a dressing slows it down bc fats have a slower time. Then acount for combining foods with different digestion time causing then to stay in the gut longer
