•• Spinach Bricks ••
For 2 people
210 g frozen spinach
100 g natural lacto-fermented tofu
30 g plant-based feta (here the Violife Greek white)
½ tsp garlic powder
½ tsp semolina onion
2 tbsp malted yeast
¼ tsp salt (use less with wild garlic lactofermented tofu)
Pepper and zaatar
2 brick sheets
Olive oil

•• Ajo blanco ••
For 6 persons
100g bread
100 g blanched almonds
1 to 2 cloves of garlic
1 tbsp sherry vinegar
60ml olive oil
200 ml oat or almond milk
200ml water
¼ tsp salt
Pepper
Topping: roasted slivered almonds, herbs, raisins
Soak the bread for at least 30 minutes in a bowl of water. Once rehydrated, squeeze the bread over the sink to remove as much liquid as possible.
Chop the garlic.
In a blender, mix the blanched almonds with the salt and 100 ml of water until you obtain a thick purée. Scrape the walls if necessary. Add garlic, bread, remaining water and salt. Blend for a few moments. Add the sherry vinegar, olive oil, vegetable milk and pepper then blend again until smooth.
Reserve at least 30 minutes. Serve very chilled with a drizzle of olive oil, pepper, fresh herbs and grapes when in season.
It will keep for 2 to 3 days in the fridge.

•• Rhubarb/apple & hibiscus lemonade ••
80g rhubarb
1 apple
10g hibiscus
1 star anise
1.5 liters of water
Sugar 60 to 80 g
In a saucepan, combine the water and sugar then bring the whole thing covered over medium-high heat to melt the sugar.
Peel then cut the rhubarb and the apple, add them to the pan with the hibiscus and star anise.
Reduce to medium-low heat then cover for 5 to 10 minutes.
Filter the mixture through a fine sieve and place the juice in a cool place until completely cooled.
•• Country vegetable pâté ••
For 4 people
1 onion
1 clove of garlic
150g fennel
150g carrot
150 g zucchini
100 g cooked green lentils
40g walnuts
75g wheat flour
35 g malted yeast
60ml oil
75ml hot water
1 tbsp tamari
¼ tsp salt
1 tsp dry thyme
1 tsp dry rosemary
1 tsp dry parsley
