It was just one of those days when I did not feel like doing much and just wanted to chill have a stress-free day to be happy about my choices and being easy on myself 😌 For breakfast I made an "elevated" version of scrambled eggs and turned them into a veggies frittata. For lunch, we had a falafel sandwich 🥙 that has been on repeat ever since this day, and dinner was one of my favs, sushi rice with soy-glazed mushrooms 🍲 Enjoy my first What I Eat in a Day video!
Fritatta Recipe ish:
2 leeks sliced
5-6 mushrooms
spinach
onion salt
5 eggs
cheese
Falafel Sandos:
Frozen Falafel
Tomatoes
Cucumber
Red Onion
Olive oil, Apple Cider Vinegar, Salt
Pita Pockets
Garlic Sauce
Soy Glazed Mushrooms:
7-8 Shiitake or any other small mushroom
4 tbsp Soy sauce
4 tbsp Mirin
1/2 tsp brown sugar
toppings kimchi, green onion
