This is the natural way for the small homestead farmer to turn a $680 load of corn at the farmer’s market into a 20-$30,000 haul of highly desirable product for the local restaurants! This is the only way our farm makes money!
Thank you for your coment Theophilus and all my respect to you and to your farm and the work everyone does there, what a beautiful, healthy and natural way to make a winning to sustain what you do, thats the only way to preserve those amaizing food products. I have a little land in Michigan and I want to grow Huitlacoche> I have all the facilities. I want to know the laws and rules (legality) and what are the requirements to grow it legally? Thanks Alani
Dear Souod Alani, thank you for your message and your question, here in Mexico it grows natural if the rain gets into the husk of the corn or people add the water to push the growth of the fungus. About the laws and rules to farm it in your country, you have to check with your national and State agriculture department. Best wishes from Mexico, Lic. Chef David Jahnke
Thank you for your question, no it sadly does not freeze well but you can dehidrate them or brine them, just like other mushrooms :) Best wishes from Mexico
Thank you for your question, I would not wash it because its a fungus mostly made of moist and treating it with water would damge it and it would get mushy. Its growing on the fresh corn still being on the plant so there is no dirt on it so not necesary to wash it. Best wishes from Mexico :)
Sadly the GMO corn is modefide in a way that it wont make huitlacotche and the wind will contaminate your plants next to it, so it will be tough, but yes maybe with a very well sealed greenhouse
