Crockpot Chicken and Salsa
1 Large bone in chicken breast or several bone in chicken thighs skin removed
1 cup salsa (or more if using more chicken)
1 15oz. canned corn drained
1)Put chicken in crockpot
2)Layer on top the salsa and corn
3)Set the crockpot to high for 3-4 hours or until chicken is cooked through
4) Remove chicken from crockpot and remove all bones and shred chicken
5) Return deboned shredded chicken to crockpot (there should be juice on the bottom)
6) Stir in chicken to salsa and corn and heat through in crockpot 15 min.
7) Layer chicken mixture in bowls with rice, cheese, avocado, sour cream etc.
