This made me smile when I saw you taking the stalks off the mushrooms. I used to go shopping and pop in and see my Mum and Dad on the way home. When I got home, I would find that my Dad had snaffled all the mushroom stalks….he loved to eat them raw. Happy memories 💕
You made the risotto as we do in Italy ! In the tradional recepe we do use butter and no oil : it's a dish from north Italy where butter was used more than oil because it's a cold area where you don't grow olive trees. The rice used is either Arborio or Carnaroli and we don't like the grains too soft, that's why you stir it to keep the grains harder and you cook it for about 15/20 minutes . And the wine, of course ! I use the Italian ones , as I 'm Italian and live in Italy ... but the most important thing about the wine is : it must be good , regardless where it's from . Boun appetito from Italy
risotto is "always family meal" optional vegies, seasonal. We factor in WAY more butter, Way more "stock, in our family chicken stock", Way more dry white wine. Slow, slow, slow, "embrace ( love the "rice" )".... herbs just as serving. Mushrooms Yummmmmm, carrots in w/celery onions, endless variety! Hope you "pan fry" for second meal!.... family favorite "more so than first night". From Northern California Wine producing family. We DO SUPPORT AUSTRALIAN, NEW ZEALAND wine, all one family (really....as growers, producers, imbibers, joy of grape juice).
Looks absolutely delicious, especially the mushrooms! I like to sprinkle a mixture of shelled sunflower seeds, pumpkin seeds and hemp heart seeds on some of my rice dishes. It adds a wonderful crunchy, salty taste that I love.
Lovely! Thank you for the lesson on making risotto, I've eaten it, but now I can make it!..just enjoy all your videos, I quilt, craft, paint, am almost 71, not too old yet...Three children, all grown, 7 grands.....I get to do what I want so nice...you are a wonderful, we all learn so much, Bless you!
I ate my dinner while watching you cook. It made my frozen dinner taste so much better to watch your amazing risotto creation. I will be making that soon! Thank you for brightening my evening.
What a perfect day! Time at the studio, return to your beautiful stone farmhouse and cats, followed by a quiet eve of delicious dinner and knitting. You are livin' the dream, and I'm happy for you.
unrelated to this delicious video - i attended mark knopfler's concert last night (absolutely fabulous!!!) and thought of you and the fact that he has your mark knopfler quilt! love from VA USA
marvellous! he will have ended with Local Hero (he usually does) which I absolutely love - because it is about Newcastle! (ok - its an instrumental - but the Newcastle Football team come onto the pitch at home games with this playing!) xxx
@@thelasthomelyhouse I love Local Hero because I love the film... and the music. But he ended with something else in Prague - but I can't remember what because there were three encores!
My grandmother taught me to make Rissoto Milanese. Italian thin sausage, mushrooms, butter, saffron white wine and Italian rice. Chicken broth too. And of course grated cheese.
Hi Kate looks delicious! I also grind my paper in a pestle and mortar !just found a tippled if you are paper fan like myself! just heat the peppercorn in a dry pan before grinding !kind regards Ilona
I had the fixings to make a risotto as I watched you fix yours, with a few variations. It made a great meal that my husband and I both enjoyed. Thanks for the inspiration! I cook about the same way as you do, eyeballing it and throwing in something that loods good. Most of the time it works out fine.
That was a cozy little visit in your kitchen tonight. 😊thank you for inviting us in. Your evening sounded nice and relaxing and you looked like you needed a relaxing time in front of the telly with your meal and knitting. Looking forward to what is coming out of the pottery studio.😀
Do enjoy watching you cook. I tried your cashew/ carrot /apple soup the other day, my husband can’t eat onions so I left them out, and I think that makes the difference. It could have turned out better flavor. However, I will try it again soon and make half with onion and half with no onion ! Thank you for sharing!!
I like to watch you chop onions because you tell the most interesting stories... even if it's stories about what you've been doing since last time! ❤🌅🌵
I love the way the number of mushrooms grows. Happens to me too with vegetables. They all look like a lovely idea until suddenly I have enough for a gang! ;-)
I love visiting and "chatting" with you. Even if it is a little one sided. I am a watercolor artist and a maker. Your videos are like a visit with my mom or my grandmother. They were both makers and saved all sorts of bits and pieces which I have now along with my bits and pieces. At 67 I doubt I will ever get everything made that is in my mind to make...oh well.
Hello! Your comment sounded oh so familiar! I know that I won’t get through all the craft stores that I have, so I’m slowly going through my stash and finding the surplus new homes. I’m sure that I will find more techniques that I’d like to try, so I need to find room for them. I’m 63, and still get very enthusiastic about trying new things!
That was so funny! I thought you were going to drink the wine while cooking and then you poured it into the pan! Turned out perfectly though as you did both. Thanks for the chuckle and smiles that will last.
hmmmm, that looks really yummy! I love watching other people cook and to get ideas! Sometimes I just run out of ideas and get tired of eating the same foods over and over again. I sound very spoiled, considering how many, many people would do anything for the same food over and over again, as long as they get food! I try to be mindful of that. Anyway, thank you for sharing your way to make risotto!
I have been watching Travels by Narrowboat with the Country House Gent. He cooks for us as well as taking us on England’s canals. No new ones since the lock down but the originals are quite good.
what a smug little face at the end there ready to tuck in to a tasty dinner. So cute.Well my turn to be smug.....I'm off to New Zealand for Christmas! Passport renewed in readiness...
OH!!! green with envy! start a channel and tell us all about it! New Zealand - you'll find a big chunk of my heart there somewhere (its off the end of Farewell Spit !) xxxxx
I'm with you about mushrooms, Kate. LOVE them in salads, omelets, sauteed with onions to top steak, chicken breasts or pork chops (not being vegetarian)...and in soup. There was a meal my late mother & I LOVED of a Sunday lunch after church years ago: wild mushroom soup, foccacia bread and a glass of red wine. When she died, my sister and I went out to the restaurant that made this delight, and had it in Mom's honour. Mmmmm...I can taste it now! :-)
A friend of my son's made risotto for us about a year ago. It was the first time I'd ever had it, and it was wonderful. Your recipe looks yummy! Cracked me up, the sly smile when you claimed to have only eaten a few mushrooms.
Love your cooking videos Kate. I have been addicted to halloumi cheese ever since seeing you use it. I think risotto rice will be on my next grocery list.
You've inspired me to give risotto Another go! I always love your videos - thank you for taking the time to make them. You do things like I do. Sort of use what you have. I mean after all, and the old days they didn't run down to the supermarket. I learned so much from you and also it validates sort of how I live. you're the best! Keep the videos coming please
Hello Kate ~ I have had risotto only once (made from scratch) and it was worth the wait. Your supper looks delicious. I just might try making this for myself.
You just made your dinner and recorded. But this was so peaceful and relaxing to watch. It looked good and filling but you could have made anything. I just enjoy your company and hearing about your day. 🤗
Thanks for inviting me to dinner. I had Geezo (sp?) which is a spicy Mexican beef dish. Wish you were here to share it. Bon Appetit, my friend. Namaste, Judi
I love to watch you cook. But my favorite is watching quilt making I love to make quilts and I have one in the works but for some reason I haven't worked on it in a month or longer and I'm trying to get my mojo back and work on it lol.
Really enjoyed watching you Kate, a very relaxing and enjoyable video. Since my husband died I don’t enjoy cooking any more but watching you bought back happy memories of supper times when I would whip up a dish for us both - happy times. Always love your vlogs Kate, big hugs and loves xxxx Dorothy 🙋🏻❤️😘
I don't like cooking for one either - but I don't mind making more and eating it twice - its important to look after ourselves with nice food. so easy to forget that - I often do sadly xxx
Thank you lovely Kate, just having a sad day, I am sure you understand but it will pass - just have to keep busy and positive. I love your part of the world, we visited often and I have fabulous memories of the wonderful landscapes and very friendly people. Enjoy your lovely meal and thank for replying xxxxx🙋🏻❤️😘🌟
Yes, it's a hard transition. I make all my own food, and the neighbors get samples! That keeps me interested and eating well, despite now being just one at the table. Just remember you're worth it!
Chopping and prepping are my favorite part of cooking. My husband says I would make a great sous chef haha! Your supper looks amazing! Will make it soon! Thanks for sharing with us 💙
You could grow some mushrooms in your wet tree meadow. I saw a Thai lady who made holes the width of your thumb in a thick old tree branch which she filled with Shitake mushroom and back filled with moss. It produced a whole load of mushrooms in no time and gave her a never-ending supply. Mmmmm risotto, scrummy.
Risotto - one of my all time favorites, and mushrooms are wonderful in it. I am pleasantly surprised to see that the cup you are using to measure your risotto is the same as two I have. I love them. What’s surprising is that you are in England and I am in Alaska, USA. Small world.
That looks absolutely delicious!!! Now I'm hungry!! I've never had risotto before so I think I need to try some!! Thank you for a fun cooking lesson -- I also didn't know to add salt at the end with beans and lentils! Good to know! Thank you Kate!
Hello Kate, I've never made Risotto. My family was partial to potatoes. May be to the fact of our Irish ancestry lol. Looks yummy. Thanks for teaching me how to make risotto . Hugs from NJ ~ Anita
Ah, Kate, you're a veg-aquarian! Your risotto looked fantastic. I'd be omitting the salmon and adding a few more veggies. When you taunted with it only "needs one more thing", I shouted WHITE WINE!! Not that you could hear me. ;-). Thanks for sharing your Tea with us...always a pleasure to have one of your cooking lessons....with butter and Parm!!
I’ve just finished making damson chutney, so sitting down, watching you cook a delicious meal with a purring marmalade cat on my lap demanding stroking. Your risotto looks fabulous. I have some salmon in my frig..... hmmmm
Hi Kate. Been making chutney and mincemeat. Done a bit of sewing. Making a weekend bag for a trip to Durham with my daughter in September. I love risotto too, 'Jamie' taught me . Enjoy your meal and relaxey vu.
Mmm that looks lovely!! I have never had risotto let alone attempted to make it. I might have to add that to my bucket list. 🙂 Lovely to see another video posted. I sure do enjoy them. ❤️
