Ah, McDonald’s French Fries. According to a poll we recently ran here, 48% of about 42,000 of you prefer this restaurant's slender tan starch sticks to all the other restaurant tuber cutting offerings, with this percentage more than double the next runner up which was a blanket choice of “Other”- i.e. nearly all other restaurant french fries combined. While many view McDonald’s as a hamburger joint, the truth is, beyond in the present day McDonald’s making about 1/3 of their revenue from their franchises on real estate (all once causing Ray Kroc to quip he wasn’t in the hamburger business, but rather “My business is real estate”), McDonald’s came to dominate the world of fast food for primarily one reason- their french fries, with an astounding 1 out of every 200 potatoes grown in the world today used to make these salty sticks of potato guts. Which is extra good for the company as french fries are also one of the most profitable non-beverage items on the menu. So just how did these french fries come to be? What exactly is in them and how are they made? Why were they the center of a surprisingly bitter and occasionally riotous and deadly fight? And just who invented french fries at all in the first place?

Fact check fact boy. Potatoes used to be poison when unripe, it was (mostly) bred out long after they made their way to Europe and into common usage. People weren't wrong about potatoes being dangerous - they could be! This has been reduced over time through breeding and proper harvesting but it's still possible. There's about 50 cases reported a year with modern potatoes, some of which lead to death. It's thought there's many more as the symptoms mimic food poisoning.

Cant stand McDonalds fries. Greasy and fake tasting. Once you eat Checkers/Rallies fries youll never even eat at McDonalds again...even the burgers are better with real meat.

@user-ri5fe7ti6i the "good" parts in this situation are the ones which won't get you sick, which is basically the whole human body. Baring any parasites in the person, and even then with proper cooking, you could eat any part of a human being and it won't have any negative health effects. Well, any negative physical health effects anyway. Save one part. The brain. Eating a human brain comes with an incredibly high risk of contracting prion diseases. Which are not anything you want to mess with. They are basically different versions of mad cow.

​@@zogar8526 you're right outside of saying the risk is incredibly high. It's only incredibly high if that person already has a prion disease. The one you're thinking of only spread like it did because of ritual funerary cannibalism in a tribe contained within a small area. Tragically the women and children usually got the brain. The onset time of symptoms was also often years, making it harder to put together the symptoms with the cause themselves. Looking into prion disease is one of those things that cost me sleep at night, they're horrific.

@@thomasjones4570 McDonalds fries don't even break down. I've left some in a mop drain for a few days to see if anything happened to them and after days of scalding hot water and all sorts of different cleaning chemicals, they were still the same.

I worked as a fresh produce controller at the factory that supplies all the fries for McDonalds and Burger king (Yes they're made at the same factory) in Norway. The job was a temp job, consisting of taking samples of vegetables as they arrived at the factory, and determine the quality of each shipment. And I have to say, McDonalds had the strictest standards, and the best potatoes that entered that factory. I have also worked quality controlling potatoes bound for grocery stores. McDonalds had the best potatoes I've ever seen. In Norway they use a type of potato called Innovator. The innovator potato is a giant potato, and is a bit special in the way that it doesn't really change colour that much when you fry it.

its just a shame that they dont have the same standards when it comes to the people who cook them, in the part of america where i live its always the newest member of the kitchen staff that cooks the fries. In my experience mc'donalds fries are awful 9/10 of the time and amazing 1/10 of the time

Then it's absolutely an employee problem. French fries are like a wet noodle in two of three local McDonalds. The third is the only place I'll go. Fries get slightly brown, which creates a beautiful crispy texture.

@@tylerhorn3712that is a management/training issue. There are timers on every machine. It is literally fool proof if you are following all the standards that are in place. (Having worked in one and several different restaurants while younger) if the oil is not up to temp, management should know from having done their daily checks. If the employee is not leaving the fries in long enough, management should be training them better. Problem is the management is usually the worst example of management you’ve ever seen, even worse than retail.

Even the second recipe wasn't bad. Then they removed beef flavoring, because of Hindus. Then the third was so disgusting. Man that was like early or mid 2,000s. They removed trans fat. Then they changed again. I seen studies saying tallow isn't as bad as once thought. Especially compared to certain oils. It has to do with keeping the oil on the burner for long periods. Wish they'd go back to the 93% tallow.

Order them without salt, they will be hot and fresh, and still pick up enough salt when they dump them into the tray from the constant oversalting of the reg fries.

McDonalds used to peel and slice the spuds, then put the loaded fry basket in a draft of warm air for 30 or so minutes. This made the starch in the cut cells of the potatoes to turn to sugar, which made for a very appetizing color on the fried product. This plus the beef tallow made for a GREAT tasting French Fry. Now all of that is gone, and the fries are not great.

If you do this with sweet potatoes, you will get some starch breakdown into sugars, because sweet potatoes have far more amylase - the enzyme which catalyses the starch into sugar reaction. Ordinary potatoes do have some amylase in them, but nowhere near as much, so 30 minutes of warming is nowhere near long enough to convert any significant amount of starches into sugars. Anyone who has tried to make a "fermentation mash" from potatoes will have come across this problem: While malted (sprouted) grains have a lot of amylase (which is how the starches in wheat or barley get converted into sugars for beer brewing), potatoes do not contain anywhere near enough on their own, so you need to add extra amylase, usually by adding some malted grains along with the potato starch - and even then, it takes many hours or even days to get a significant starch to sugar conversion. The colour created during cooking comes from the reaction between sugars and proteins at high temperatures, known as the Maillard reaction. This is responsible for the browning of bread during baking, of pancakes and similar products during shallow frying, and of potato fries during deep-frying. Sweet potato fries do this very nicely because of the relatively high proportion of sugars in sweet potatoes. Ordinary potato fries will do this to some extent, because there are always some sugars in the potato. But not all that much, which is why the modern McDonalds fries recipe (as well as most other fast food restaurant fries) includes some added dextrose (aka glucose) to enhance this effect. If the potato itself had enough sugars or if the sugar content could be boosted to any significant degree by just blasting some warm air at the uncooked fries, they wouldn't need to add extra dextrose.

FUN FACT: In Australia when McDonald’s first opened up, they spent millions of dollars trying to get their potatoes to grow here, turns out they just would not, so in Australia our potatoes are a completely different type to those used in America, I’ve not tried American fries but I am addicted to the delicious ones in Australia 😁

in Belgium, even McDo does the frying in 2 sessions, as no respectable Belgian would like to fatty fries all baked in one go :) . to me, McDo fries are.. to thin like french fries.. gamble whatever fries place you like and there is probably about 80% chance the fries will taste better then in a McDo :-p i've never heard of someone just going into a McDo cause they just wanted fries, then we go to a frietkot ;-) , I am quite confused of the fries shown ar 19min, those look the thick really tasty once, NOT AT ALL the inferior onces from McDo.. but problably it was just a good image and the designer does not really spot the difference? :)

This makes sense. Usually when I eat a meal I start with the main part (ie burger) so that if I get full its the extra stuff that goes to waste. When I lived in USA for a year I had to eat the fries/chips first because they'd taste worse by the time I was done with the burger. I knew there was a difference but I thought it mightve been the oil.

It used to be a McD's joke that most locations didn't have hot chocolate because the machines broke down so much it wasn't worth the money to buy them. Now it's milkshakes.

The is a web ite that reports which mc donalds has ice cream (not associated to mc d )and milk shake or just check their app. Both are reasonable right. Except if they are deep cleaning it or the machine (so cleaning and refrigeratoring shaie and sandue mix) e is self cleaning ( heating mixes to 100 degree than cooling)and the manger for to make it unavailable on the POS system. Self clean is every 24 hours deep clean every 7 days. Also daily clean takes 30-60 mins if you know how to take it apart.

I live in a small city in Mexico. My local butcher sells ready to fry potatoes that are coated in beef tallow. They air fry wonderfully. So yummy, and no chemistry.

Very funny, but I do wish there was a non-comedic version as I like having subtitles on but when they don't match what is being said it's extremely distracting, especially when it's inconsistently inconsistent.

Once they CHANGED the grease it was over. If your taste buds work then you know. I could get them with a meal or eat them alone. Once they CHANGED the grease the ONLY WAY I could eat them. Was with the Hot Mustard or Ketchup and even MORE $ALT than they already put on them . For that matter the nuggets don't taste the same either. Probably why I can't remember the last time I was in one.

The spongy chicken meat in the nuggets is just ground up, bleached, and washed chicken with some extra salt in it. The "breading" is where they snuck in a bit of "cellulose powder" made of ground up, bleached, and washed wood pulp. It's used as a filler in a lot of things. Makes them just a little more bland and dry, but there's no bad health effects. No good ones either. It just passes through without helping or hurting anything. It's not even fiber after what they do to it.

When I was a child we went to an early Mc Donalds that had glass all around, allowing a clear view of the kitchen. I remember watching them take large (russet?) unpeeled potatoes, slice them with a manual slicer, and then fry them. Sometimes I would get several fries that were easily 6 inches long!

15:35 -- 1980s teenage me, working at McDonald's and opening up those frozen bags of Simplot cut potatoes to pour into the baskets to fry, assumed that the company name on those bags was some cutesy corporate combination of "simple" and "plot" -- as in "here are **simple** sticks of potatoes grown on our **plot** of land" And even the much older 2020s version of me didn't realize Simplot was actually somebody's last name until RU-vid brought me here.

I'm all for religious observance and all but McFries did lose something when they switched away from beef tallow to vegetable oil. Five Guys (just had some yesterday) uses peanut oil though and their fries are pretty good.

Quite a few years ago, some wealthy guy decided that McDonalds was giving people heart attacks because of the tallow they were fried in. This had the reverse effect from the well-meaning idiot was trying to get. Now, we have learned that saturated fat is good for you and poly-unsaturated oils are really bad for you...a really ironic result. They have not switched back to tallow, to my knowledge.

You say that, but you don't apparently know what I learned from working at McDonald's. Namely, they come in boxes. Each box contains 6 bags. Each bag has enough frozen fries to make 2 Larges and a Medium....and the entire box is paid for just by selling 2 Mediums.

I have always found funny that while in the US fries are associated with France while in France they are associated with Belgium. In fact, this debate is both friendly and purely academic: the cuisines of Belgium and northern France are identical, so what we can say with relative confidence is that fries probably originated from somewhere in this larger region, spread to France and from there to the rest of the world

Personally, I prefer Burger King fries over McDonald's -- they're thicker and not as salty, so I can better taste the potato. If I can find them, I REALLY prefer the chonky potato-wedge style fries -- sooooo gooood! ^_^ But all of the fast-food fries seem to need to be eaten almost immediately, as they dry out quickly and become almost inedible when you try to reheat them.

The common french fry was actually a Belgian invention. It was created by french-speaking Belgians. And there was some confusion whenever the french fries are being served to some people and they thought they were French. This is how the name was created. It wasn't specifically a French man from France that created them. Rusty on the details but I think you can kind of understand the point. The beef "flavoring" is enough to cause the numbers of someone allergic to beef, to fluctuate and go up. I know a woman who was bitten by a lone star tick and cannot eat red meat or pork of any kind. Sometimes she would treat herself to a McD fry, but her doctor kept complaining that she was eating red meat somewhere. When they finally, painstakingly, narrowed it down, she cut the fries from her diet completely and her levels regulated again. This has been within the last ten years.

Yep, this is me. It's called Alpha Gal and it sucks. Eating a seemingly harmless fry can have me sick for the rest of the day. I can take immodium and other meds to help, but the side effects aren't worth eating red meat intentionally...that should be my choice, though.

In Canada we have a burger chain called Harvey's. That's where we went. When my kids started school, around late '90's they found their friends went to McDonald's so they of course wanted to go to. So we took them, they hated it and never wanted to go back. Not everyone loves McDonald's fries.

Belguim here, nobody (at least native) goes to McDo just for fries, the fries are on the menu cause .. if you don't order a menu you haven't filled up a real meal.. I've probably been in a McDo about 4 times in the past 15 years ? :) , I feel the fries are no different, very predictable and uniform ... and ... never special, but always quite okay.. In Belguim, just getting fries somewhere at random would give you 80% chance to get something better the McDo, in Spain or so, i would say the opposite :), but just don't order fries in Spain, although they brougth pototoes over to europe, they actually only really seem to have real good spanish dished that don't seem to use potatoes :), Paella and such , .. pretty ironic actually, Spain is about the last place i would consider ordening French fries.. unless.. it's from a Belguim frituur.. there are actually a couple of dozen of those now, from Belgians wanting to move to a warmer country and seeing a real lack in good fries for sale there :),

As someone who managed a McDonald's for more than half of the the 80s, the fries cooked in beef tallow were the best. Actually, the best fries were the ones fried at least 8 batches after the tallow charge. The tallow is too clean when it's fresh and needs some carbon to add flavor and color.

They are cut thinner and they use a more finer salt. Oil it’s fried isn’t important. All u really need to make the same McD fries is a mortar to grind regular salt more fine. Making the fries thinner means it’ll crisp more without burning the entire stick.

You're factually incorrect. Fat is flavor. Any chef or good home cook will tell you that. Canola/rapeseed oil is popular right now because IT DOESNT have a flavor. Beef fat does have a slight umami flavor, as does lard (pig fat). Any county farmer whos rendered lard can tell you how much flavor is in the stuff...as well as how hard it is to wash off!

I was a McD's manager when the change was made to remove beef tallow. It was disastrous. Customers complained nonstop and so did employees. Managers were required to do weekly evaluations at one McD's and one competitor and ur fries suddenly didn't compare as well. Lots of franchises complained to corporate to switch back to beef tallow but corporate said the optics weren't right. 🙄. Every time they choose something like optics over quality it bit local franchises in the arse. And honestly, every fast food manager goes home smelling of grease. It's in your clothes, on your shoes, in your carpets. I can honestly say that the partiality hydrogenated vegetable oil stinks worse than the beef tallow oil did. Ew.

I have Alpha Gal syndrome. The enyzymes in red meat make me sick. Whether it is the actual meat or meat proteins, I'm still likely going to get sick and I have a right to know ahead of time that the food I'm ordering is going to make me sick. They put so much effort into labelling for peanut, tree nut, and gluten allergies, they should be required to list all ingredients that are a known allergy and that includes red meat. Alpha Gal is highly underdiagnosed but is getting diagnosed more finally. So yes, they should have to list that there is beef in their fries. I no longer eat McDonald's, but I wasn't aware that Hardee's fries also have beef flavoring and so I got sick from eating them. If I had known, I could have avoided them or taken my medicine.

Not only have the prices gone up to a ridiculous extent that i would rather eat virtually any other food in similar cost category. Now Wendy's I'm genuinely in love with. I'd put Hungry Jacks (Burger King) fries way above Maccas fries at least in Australia; maybe it's different in the US but Jacks fries are crisp outside, fluffy inside and have the best seasoning.
