As much as I'm enjoying this video so far, I must admit that I'm quite dismayed to see Basashi on the menu. While I'm no activist nor am I a vegetarian/vegan, the horses sold in the horse meat trade suffer *GREATLY* in the process of being shipped out to become a delicacy. Almost 5,000 live horses a year are shipped to Japan from Canada in a brutal and unimaginably cruel way; 3 to 4 fully grown adult horses are packed away in tiny wooden shipping containers so tightly that they have absolutely *no* room to move around and often can barely stand up due to the containers height not being tall enough. The frightened horses often become agitated and bite one another due to the above mentioned as well as the stress of being unfamiliar with each other; they have no food or water during the flight over and sometimes weaken and die before arrival. I'm *not* judging those who eat horse meat as I, too eat meat but I wholly condemn the horrors that the horses are put through before even arriving to the slaughterhouse -- this is a multi-million dollar business and these magnificent animals deserve far better treatment. It's unacceptable and as with any animal we eat, we MUST demand a humane way of slaughter from those who raise and ship livestock. There's got to be a better way😞

Wow the flights/steps of dishes were really interesting and seem very delicious. I was surprised by the variety of foods. Everything looked so fresh. The theme of the restaurant was historical and interesting. I thoroughly enjoy your content. Thank you for how wonderful it is! 😊

I'm genuinely curious. How are the Shinsengumi regarded today? I've seen people call them bloodthirsty tortures, while others call them heroes. Also, is Sakamoto Ryuma regarded as a hero by everyone, except the Samurai families (because obvious reasons)?

Hello Shogo-San, I am enjoying your videos very much. I lived in Iwakuni for four and a half years while stationed at Marine Corps Air Station Iwakuni from 1980 through 1985. and then at Naval Hospital Yokosuka form 1988 through 1991. My wife and I taught conversational English to an adult English club led by a noted writer, Mira Hirasa, who passed away many years ago. I love the Japanese people. OMG! That place looks so amazing!!! As soon as you step inside the building everything is master level craftsmanship - the architecture, the food, the dishes the food is served on, even the menu is beautiful!

I hope he does a video about it. Don't know about the details, but the chicken is like deep frozen to kill bacterias. I know it is suppose to be safe, but not sure if I would trust it.

I agree, also the horse. I don't have reservations about eating horse meat, however we had to treat our horses twice a year for parasites. The horse parasites may not have been in the meat and may not be a threat to humans but it is still a difficult idea for me.

Mitchel M, I mostly agree with you. As a Laboratory Technologist witch some experience in parasitology (not anywhere near an expert) and having lived in Japan for 7 1/2 years, I’m still hesitant. I do know that altra-low freezing will kill parasites in fish so maybe that is how the other meats are prepared. Cheers.

Thanks for another well-made and intriguing Shinsengumi video! It looks like it was a really enjoyable experience for you both. It's been years since I last went so seeing the differences in the menu was pretty fascinating - though I also went in the middle of a collab with a Shinsengumi series, which they seem to do a lot of!

I went through culinary school here in America and the thought of eating fowl or red meat is to alien to me and goes against everything I was taught that my jaw was on the floor watching this video. If I was there I wouldn't have stopped you two or anything, but I would have been eating my way through a mountain of tempura.

I know about this event thanks rurouni kenshin. The cool about shinsegumi and imperialist fight, is that there is no 'bad ones' or the 'bad side', they only fight because they want the best for Japan, but with different ways

According to another video I've seen, tube Wasabi is primarily horseradish and mustard. The actual ground Wasabi is apparently very labor-intensive.

It depends how much quality you desire. Some that are really cheap are also not the best quality. If you just want one to hang on your wall for less money I’d say Etsy.

Coming from the US, there is a HUGE deal about raw chicken here and, even though I know the danger of eating it is really not much, I'd still be wary of it personally. But it all looked DELICIOUS. Especially, I would love to try the horse meat sashimi. Wish I could try horse meat here but the sale of horse meat is, as far as I'm aware, illegal in the US.

They have a different standard they tend to immunize their chicken against salmonella whereas we just feed them antibiotics here

You can eat raw eggs in Japan without fear, whereas in the US, that would be gambling with death. Remember, it's all about the money here. Our local Chipotle nearly killed several people with bad pork.

In the US we can NOT eat raw chicken without worrying you might get E-coli, or Salmonella. How are you able to eat the chicken raw? Red meat is fine to eat raw.

Beer’s a Europe / Middle East thing, elsewhere it’s introduced from there. So in Japan with its continuous isolationist stances it’s fairly recent

I'm really surprised that it's okay to eat raw chicken in Japan. Meanwhile the rest of the world doesn't eat it because of harmful bacteria. Have you ever had some problems because of it?

Chicken meat isn't harmful in itself. It's only when it is exposed to salmonella that it is a problem. Japanese farming practices are much more hygienic than Western standards so food poisoning is not an issue.

It's not about cooking. Its a style of cuisine derived from culture. It has been said that they prefer the fresh taste. You can find cooked food in Japan. It's more of a cultural aspect of their eating preferences. Also It has been said that Japan has very stringent consumption and cleaning procedures for meat and eggs including sterilization.
