Another installment of whetstone wars. Epic battle between these two whetstone companies. Giants in the world of ceramic whetstones. All synthetic stones with no natural stone contribution. These 2000 grit stones are legends in the industry. Once again we battle with the knives provided by Tokushu Knife. Two Mortitaka AS 210mm Gyuto were each sharpened on the respected stones. All the work was done just on the stone. After the knives were sharpened and compared, we declare a winner. This is based on price and size and how long we expect it to last, as well as how well it performs. It's pretty obvious in this episode. We have links below to some of the items. I've watched a lot of knife sharpening videos trying to get it down to "a piece of cake", and this channel is definitely one of the very best, going into detail and "show me", and very entertaining. Couldn't help a LOL at your dog, Greg, like "Oh, no ... here we go again ... they can't hear what that scratchy vibrating noise is like!"

Trust me, she has definitely thought about it. I keep coming home with knives and she keeps doing the math. There is a goal. We are moving forward with a plan. My wife is awesome.

Green Brick hands down, there is little difference between the 2k and 1k hyper in sharpness.

another WHETSTONE WARS ...yes. I really love my Shapton Kuromaku 2k, creamy smooth, perfect feedback and a phenomenal edge with perfect bite/sharpness ratio ....... probably my favorite final stone for stainless steel. (definetly best edge for meat) I have to say the Green brick for carbon steel looks very good and is probably worth a try. Soon I will be able to build a wall out of stones, the Brick will definitely come in handy there.😃

@@dimmacommunication I also own Shapton 1k (and 5k and 2k). Simply 2k stands out among the other Shapton Pro (=Kuromaku) stones. 1k has far worse feedback and a harsher not so plesant feeling. 1k creates burrs even with edge leading moves, (if you do sharpening moves parallel to the blade, yes you will remove the burr, but you will also remove the microteeth that you want for cutting meat) So after 1k the burr must be removed but a few strokes on newspaper or clean leather are not enough. You must use leather with abrazive paste or a large number of strokes -> again you will lose microteeth. (reduce bite) If you remove burr by mechanical way (drag edge through wood) you will lose sharpness. And 1k is more like 800 grit, 2k is real 2000 grit. 2k with low pressure create so small burr, that you can remove it by a few strokes on newspaper. This, combined with sharpening almost perpendicular to the blade, creates a phenomenal screamimg sharp edge with great bite........... and if you add the feel of this stone ..... then 2k wins over 1k significantly

@@dimmacommunication if you want more teeth on the edge so the knife and the stone can be at an angle more than 45 ° .... a large number of Japanese master sharpeners sharpen right edge at 45 ° and left at 90 ° (knife in dominant hand )..... for meat i sharpen right 60 ° left 90 °....yes its more dificult to hold still propper sharpening angle but rewarding

I have owned the Green Brick for several years and use it frequently. It is the closest thing to a "do-it-all" stone in my collection. It cuts fast and polishes like a 6K (a point that was not mentioned here). For that reason I often use it as a finishing stone. And you can actually use it as a splash & go as it will not absorb water. It does have its drawbacks, however. For one, it is VERY soft and loads up quickly. If you like harder stones the Green Brick is not for you. It is also messy -- at the end of your session you will have green slurry all over your fingers. But overall I highly recommend the Green Brick.

I really enjoy the whetstone wars, I do it myself to test the differences in cutting and refining. Also your personality shines through when you're out there having fun instead of being super serious :) One question I have and I can't believe I am going to say this, but I would love to see a Bess test, followed by some cutting, followed by another Bess test on the following...Finishing with and without edge leading strokes followed by leather stropping. I have tried both and haven't really seen any differences in paper cutting tests and edge retention. There is a lot of bro-science out there on this but no real evidence in my opinion. It's time to put them to the Bess test!

I don't mind doing the BESS test. I want to make sure we only use the stone to make sure that the stone gets credit for the work and not the leather. I have to make sure I continue to point out that you can take the test in different parts of the blade and get different results so I might add it but I don't think it should be the final word. We will discuss it. Yes, we're trying to get the personality to come out a little bit more. I think you'll see a little bit more this week. We're starting to relax and enjoy the show. @@nadm My pleasure to support a great channel. So I agree about the Bess tests at one point, that's why I have never bought one. Maybe see how many cuts you can do before magazine paper no longer cuts. It's a tough nut to crack. I've heard people go either way in this issue, all of which have great experience and really good bro-science that sounds so logical that they can't be wrong :). Personally, what I have been doing lately is just trailing strokes and near the end I go three strokes then, drag the burr across the stone (I've seen you do this before too) then 3 more trailing so the burr is on the other side this time then drag, and do them both again so there is a total of 4 drags across the stone. 2 on each side. I then follow by 4 superlight trailing edge strokes then finish on suede with diamonds and leather. When I write this all out I realize how I am way over agonizing all of this and it seems looney. But, damn I love sharpening and I love a sharp knife! All the best!

in this range I like shapton pro 2k. just about the best feeling synthetic Ive ever used. I also have been recommend the Naniwa Pro/Chosera in this range by folks who are REALLY in the know (for example, Milan Gravier). But fun to see these two stones. I know the green brick of joy has its name for a reason. Oh also like you I flatten with pencils, I might recommend some Hi-Uni 2B pencils for that task. a small, but fun, QOL improvement. additionally, I dont really see the point in natural stone powder mixed into synthetics. just buy naturals. IMO anyway. finally is that a Natsuya?

The natural stone is a Natsuya. I actually didn’t mean to use that one. I meant to use the Amakusa. Lol. I do like the stones that have natural powder. They have a nice feel and you can definitely polish a knife with them. I’ll look into the Shapton Pro 2k. I don’t know if I have that one. I have many others in that line.

Green brick is available in thinner cheaper version as the 2000 in the "Traditional" line. At least a far as I can tell, I don't know how much variance they have just due to different batching at the factory.

@@nadm Naniwa seems to have three catalogs, domestic Japan, export to Asia, and export to the west, the two exports are very similar, mainly a couple packaging changes, but the Japan catalog is very different, lots of extra options. With Amz and ebay making everything available everywhere I was trying to scrape some information from the japan catalog, got some basic info but they use an "e-catalog" which google translate can't see and I don't know how to manually type kanji...

Imanishi has a similar 2k brick stone in similar size and also an extra bricky size like suehiro 3030. I may try that soon. It has dark gray color. It's named Imanishi Jinzo Aoto 2k. Wondering if it is actually identical formula with the green brick or not. In japanese videos it looked like even softer, they were raising super thick slurry. But waiting for seller's answer atm.

great video. That naniwa seems like an awesome stone. The only problem is the grit. I have a chosera 400 800 and 3k. so those stones pretty much make this stone useless in the lineup. I still want one though hahaha

It did like some of its performance compared to other things that they make. It was OK but they discontinued it. It dishing out is probably why they discontinued it

Great video as always. I'm also one of the people who likes shapton 2k. Prior to that I used to like chosera 3k. I know you said you like muddy soft stones, but you may change your preference after these two stones :) I also use morihei 4k less frequently but visual feedback is very poor on that due to color, it is a shame for the natural stone powder in it. I was skeptical about shapton 2k at first but it grabs the apex very good and maybe it feels like razor honing lvl 4+ jnats although I haven't tried a jnat yet. But yes it won't be as forgiving as a stone with high slurry. Looking forward for the new episodes of the green brick :)

I wish I could get results like that.. But I'm typically sharpening Chicago Cutlery or Faberware. Not sure if they are capable of such a fine edge. I feel you should have shown how much stone flattening was needed on each AFTER the sharpening se@sion. All the mud created by the green brick of joy probably means it needs to be flattened more often. One other comment: your hand held camera gave a darker/redder video than your fixed camera. Just a note.

Yeah, we had to switch over to the GoPro nine. We’re getting used to it. We’re not really used to using it for the handheld. Normally it’s stationary. My wife’s phone gave out. She got a new phone today. A new 13 pro just like my 13 promax. You should start seeing much better quality now.

I just ordered a np 3k. In your experience, is the 3k capable of using it like a 1 stone sharpening too? I thought the 3k I could use for sharpen and finish in one. Now it seems the green brick should have been my choice. I mostly want to use it for touch ups, where the kitayama is too fine. What is your opinion on green brick Vs 3k?

I don’t have that one. I’ll be interested in getting into it. When I sharpen on natural stones, the one I use is rated up to 3K. I’m able to get an edge. Like I said, this straddles the line but I think you’ll be fine. I definitely would like to look into that one. Please drop a link so I can make sure I get the same one you got

Can the Green Brick of Joy be left in water indefinitely? That allows you to jump right into sharpening without spending 20 getting the stones saturated each time.

I don’t know if it’s available for purchase soak but I’ll have to look into it. That’s not for me because I don’t really have a place to do that but it performs incredible anyway

Yes, I think the Green Brick is permasoak. According to what I've read some people had it for over 1 year in water without issues.

The goal is to just show what the individual stone can do. If it was just a sharpening video on how to make a knife sharper, then we would definitely do that. The goal is to see what one stone can do over the other stone. I hardly believe in using the leather afterwards if your goal is to make your knife sharp and functional. There are plenty of great nice sharpeners who do not use the leather at all

It would be cool if you did a diamond plate vs whetstones video. I’ve been skeptical of substantial benefit of whetstones over plates as I approached kitchen knives from prior woodworking and pocket knife experience, using plates and strops for chisels and plane irons (A2ish stuff), and mostly s30v and s90v. I don’t think there is much edge-wise I couldn’t somehow achieve with 300, 1-1.2k, 8k, and strops... am I missing something special about these stones? I can post/loan you the plates if you want to test it...

Quick tip: don’t flatten your stones like him. Keep the entire length of your diamond plate on your stone. If you do it sideways like he does, the plate will follow the contour and it’s just gonna take longer and waste more of your stone.

I teach that in my video about lapping plates. You can do it if you know what you're doing but yes, if your untrained then don't do it because you're slightly tip and then you will get your stone uneven. Sometimes you just have to do something for a very long time to know what you're doing.
