One of my favorite vegan cheeses is the ‪@EdgyVeg‬ Feta! Its super easy and its wildly good! I wanted to see how the Edgy Veg cheese would compare to a store bought cheese from another of my favorite Violife! Violife makes really great vegan cheeses and they've really perfected a lot of cheese flavors but would it hold up in a dish like the tiktok feta pasta?? Lets find out!

In Greece there are quite some vegan fetas sold, because of the Greek Orthodox religion and the fasting periods.

BTW I know this was for a different dish, but if you bake the Violife feta for a shorter time it holds its texture much better. I did a vegan copycat of my favorite Spanish goat cheese baked in spicy paprika tomato sauce and it turned out perfectly! I'll try homemade vegan feta next.

Lactic acid is produced when making cheese so that’s sensible. Got my potato starch, sunflower flour and vital wheat gluten today. Tomorrow I’m trying to make seitan!!! Betta feta!!

I've done something like this before! I pressed extra moistrure out of the tofu(not silken) to keep some of the little chunks in there because that little chunk sort of texture always makes me think of feta haha. Lovely recipe, man!

That's one of the best things about his videos. A lot of vegan recipes are really good for vegan food, but not necessarily better than the "real" thing. Sauce stache's recipes are genuinely delicious, vegan or not.

You two are just too cute 💕 Edit: also love the new taste test. Comparisons are really helpful imo, especially if I know what the other thing tastes like. In one of your cheese recipe videos (aquafaba and cashew cheese), you said it tasted a lot like Alfredo. I made the recipe immediately because I was so excited to have something taste like Alfredo without being made of butter and cream. It inspired me to mess around and make some pasta sauces out of it. And it tasted wildly similar to alfredo sauce 😋

I’ll will have to try the homemade. I did this recipe with the Violife feta, made a point to put less oil, and when it came out still so liquidy I just blended everything from the oven before adding my pasta and it turned out as a nice, thick (ish) sauce. It tasted good!

I love things I can just throw in the oven 😊 I did try something similar with tomato sauce and the Kite Hill ricotta because it happened to be what I had on hand and that vegan cheese stood up to baking really, really well!

Yum, cool video!! I tried the feta pasta dish once, and then I tried it with chickpeas instead of pasta and I liked it even better!! I think the chickpea flavor stands up to the feta flavor in a better way. Also, yeah so much oil in the original recipe, but I did read from one blogger that the reason there’s that much oil is so that the tomatoes “confit” in the oil instead of just getting roasted.

Now, this is a recipe a lot of people are veganising right now using Violife feta and even before I saw any recreations, I knew it was not the optimal choice as it is pretty much all coconut oil ;P I was waiting till someone tries a more "substantial" vegan cheese in this recipe and it seems you chose very well! The tofu must have added that lovely creaminess which was lacking! I was wondering, based on the recipes I have seen on "VEGAN CHEEZE- Hits and misses!" fb group, how would an almond based feta work out in this recipe...I lot of people swear it is the best tasting one. . Anyways, thank you for testing it out these 2 versions for us! Stay safe and have a great rest of the week!

Thank you! I knew going into it that the violife would just completely melt into nothing. I was hoping that it might stand up a bit once the pasta was added.. but it stayed fairly thin! I bet any cheeses with more depth would work great in this.. tofu, almond or cashew based would all work great!

I made the recipe with the violife feta last weekend, wish I waited a few days and watched this first, I really couldn't handle the texture of the melted violife. Definitely want to try it using homemade vegan feta (also looks way better imo).

Yeah the violife tastes good IMO, but the texture is lacking... the homemade cheese nails the texture WAY better.

@@SauceStache do you think you could get away with using less olive oil? Why do you have to use coconut oil (refined)?

@@aliciashanks5239 - Yes, you can use no oil, and the cheese will still melt. You don't have to use refined coconut oil, you can use unrefined - it will just have a stronger coconut taste to it.

I made mine with the Violife feta and it was like an oily sauce with feta flavor, so for texture I added my almond feta cubes. It was a success!

Lovely recipe as always, Mark! Orecchiette is a perfect pairing for that feta creamy sauce. :) I just wanted to let you know that the Italian pronunciation of orecchiette is "Oh-ray-key-ayttay", which means "tiny ears" haha. One of the most traditional ways to serve them is with broccoli rabe and toasted breadcrumbs. I personally don't add any cheese, hence it's vegan! I think you would enjoy it. Cheers from Italy! 💝

I have made this dish (using Violife, now I am interested in trying the other version) three times now. I find I like adding some chopped up sun dried tomatoes to give it more contrast. Last time I made it with some chopped up Beyond Hot Italian Sausage. That was pretty epic also.

What a good idea, I love the flavor of the feta Violife, but when it melts it just turns into oil (its 68%coconut oil) so tapioca will do the work. Awesome, thank you!

When I make cubed tofu vegan feta, I make a brine with Uma plum vinegar, water, sea salt, and a bit of olive juice if I have it on hand. But the ume plum really makes it tangy.

I love the taste test portion of the video! I would recommend crushing your garlic first then putting it either in the cheeze if you're making the tofu version or add it in when you have 5 or so minutes left of cooking to make sure it doesn't burn so you don't get giant chunks of garlic when you eat (I speak from experience!!)

I used the violife cheese. The trick is to cut it in half and only add the second half during the last 10 minutes of cooking. The texture is creamier that way

Great comparison and thanks for introducing a home made version for those who don't have access to vegan convenience products! Small request, for the taste test, could you make it more clear from the start which one you're tasting? All the “this one“ and “that one“ kept me pretty confused and I had to go back a few times to find out which one was which 🤓

i love the violife feta cheese but only 'raw', not cooked, however for this recipe I would add the cheese last, so it stays creamy somehow, cannot wait to experiment!!

With the Violife Feta, I've found that I need to use less olive oil and it doesn't need to cook as long as regular feta. Also once it's mixed in with the pasta, letting it cool for few minutes helps the sauce stick better to the pasta and thicken up a bit. Although making the tofu based feta, I found that concoction to be more filling/satisfying. Most likely because of the higher protein.

I found the same thing happened when i made it with the violife feta. Next time I think I will add the violife feta the last 5 minutes of baking or so, so it softens but doesn’t complete melt. Although taste wise it reminds me more of goat cheese than feta.

The Violife feta is so good but its really just flavored coconut oil. I'm curious to try this other recipe.

I'm not a feta cheese fan but this recipe tempts me. The taste test gives feedback that this is a creamy cheesy feta, not something I associate with feta. Knowing that it tastes cheesy & makes up creamy, actually makes me want to try this recipe. Not something I would do with feta. Thanks Mark and Monica!
