We don't have white bitter gourd here in Manila.its unique of having it there in Taiwan.its good healthy summer soup. Different style chicken added later.gourd will become too soft, anyway soups must be soft enough i will try with bitter gourd usually found in the market.
Thank you for sharing your experiences in Manila. We usually use green bitter gourd to stir fry with salted duck eggs and garlic here in Taiwan. You can try whatever bitter gourd you get in your local markets to make the soup, but you have to try if that still makes good soup. Hope you enjoy it!
