White Chocolate & Raspberry Blondie
Recipe
185g butter
200g white chocolate
275g caster sugar
3 eggs
185g plain flour
105g self raising flour
115g macadamia
180g white chocolate chopped
150g frozen raspberries
1. Combine butter and 200g white chocolate in a saucepan, stir over low heat until almost smooth. Remove from heat and cool for 10 minutes.
2. Preheat oven to 160°C and line a 20cm x 20cm tin.
3. Stir sugar and eggs into the butter mixture then mix in flours, 180g of chopped white chocolate and macadamias. Gently fold in the raspberries. Spread mixture into prepared tin. Bake for about 35-40 minutes. Cool in tin before cutting.
