My mom was terrified of a pressure canner because a jar burst and burned her pretty bad. I was in the kitchen with her. I didn't get hurt but at 6 I never wanted one. I'm 62 and just started. I've done broth, beans and ugly chicken from your videos so far and love it.

I remember my grandmother telling us about her jars bursting when she was canning. I had no idea what canning was at the time. When I started canning, I read the instructions like 10-20 times before I started and in between each procedure. I watched many videos too. After my first canning experience, I realized it wasn't bad. It becomes habitual. Lol

You just need to make sure your jars are approved for pressure canning especially when you find them in yard sales or second hand stores

I only tried water canning tomatoes and it's going well, other than that I can't do anything else, I'm terrified of the pressure canner, but hoping to venture other recipes once I get my electric pressure canner

Hi, Leisa! When I first started pressure canning a couple of years ago, I printed out and laminated your canning checklist, and still use your canning check list to this day. I was so new I didn't know what a steam canner was at that time! LOL. Just got a new 915 and test ran it with water. I love canning and follow the safe guidelines, so there are now no worries. Allows me to catch produce and meat on sale and can it up. I'm a teacher and need go-to convenience during the school year. MREs is what I call some of them. Leisa is a great wealth of information! You all are in the right place if you are watching this :)

As a Mexican I never knew there was such a thing as home canning your own food. I was so afraid of all the stories involving pressure canners/cookers that would explode and of botulism that I almost gave up when I couldn’t bring my new presto canner to pressure. But my husband convinced me to return and get a new one and I couldn’t be happier. It’s been over two months and I’ve been canning like crazy 😅 we love our ugly chicken, pork butt, and the softest beef roast that comes out of those jars!!❤ thank you Leisa for your encouragement and support!!!

I think you’re reading my mind. I bought my canner five years ago and I dust the box yearly. I’ve got the books, quart bottles, 1/2 quart bottles, pint bottles, and the canner. All I need is the confidence. Thank you for this video.

I was in the kitchen when Grandma's canner blew pinto beans over me. But now they have that safety I make sure it's in the front so if I forgot it for four hours it would blow the contents to the back of the stove and not the front where I am.

I grew up with water bath canning but my Mom and Grandma never pressure canned. I was very leary until I watched last year's Canuary playlist. Now I'm canning anything that will stand still long enough to be in a jar! Thanks Leisa for all you do.

The first time I canned anything, I shook like crazy. Why? Because when we were kids, my mom would pressure cook something, and tell us if we touched the jiggler, we could blow up the house. Her voice would be "up in the rafters", and she hammered this every single time. So, my biggest fear was blowing up my house. No joke. I haven't canned dry beans since 2020, and I'm getting low. So, I pulled out the instructions and read over each word about 10X. Now, they're soaking. Problem is, I didn't bother to measure them out. Now, I have enough soaked bean to feed about 100 ppl. LOL!! Guess I know what I'm doing for the next 2 days!

@@JT-2012 I'm one of those who will eat the beans whole or mushy. If they're super mushy, I use them for burritos. If they're mostly whole, I use them for spicy chicken and bean soup. I love beans, so, either way, they get consumed. If you are a bean fan, try them again. If not, don't waste your time. There are so many other things we can home can!

Mushy beans? Blend and add to a soup, or mix in meatloaf. We do a Mexican lasagna; layered soft tortillas, seasoned ground beef [[ I GOT 2 FULL SHELVES OF GR. BEEF.]], cheese, diced tomatoes/salsa?, cheese. Ummmmm, more cheese.😊 This weekend it's a casserole, ugly chicken, frzn broccoli, Alfredo sauce, pasta. 😊

Great timing. I just unboxed my first Presto today. After 4 years of watching you demonstrate the proper use of pressure canners, I took the plunge (and hopefully gave you credit on the link). I was scared of water bathing the first year and it's easy now, so I assume pressure canning will be too, with practice.

I watched grandma can when i was very young. Mom got a very bad burn from exploding jar again i was very young. I bought a canner in 2019 and was too afraid to can for nearly a yr.l was 70. A butcher guy i was friends with gav me alot of bacon ends and in feb 2020 i finally did my first canning . Turned out perfectly. So the first thing i ever canned was bacon after watching alot of videos.

I was so excited to try recipes when I first started canning. Until I read salsa recipes and watched canning salsa videos. I understand why following an approved recipe is important but the warnings that came with salsa scared me. It sounded as if I added one too many teensy chopped pepper piece, I would die and take my family and friends with me. 😱 I have since made green tomato salsa and the world is safe! 🙂

I remember when I started and I started with water bath first - but was scared. I bought the biggest enamel coated carbon steel pot I could find, the first summer I canned nothing - I used the pot for a lobster boil. Then after the pot and I stared at each other for a long time and I found channels like yours I started, something I learned from you - I started with water. The rest is history, and I am so very thank full to you and your teachings. Take Good Care 🥂

I was afraid to can from listening to my grandma talking about pressure cookers and canners exploding. So I finally did it and thought that I screwed up with chicken broth because I forgot to debubble and processed it for meat times (there was no meat) and Leesa assured me that it was fine once I got the courage to ask. I was too afraid to use it.

Thank you for this. So many people are afraid of their canner because of horror stories of their older relatives. Today's canners are built in with safety features that were not there generations ago.. Respect the rules of your canner and it will feed you for years to come. Best of all you can control the ingredients that you eat.

I pressure canned hamburger with taco seasonings years ago. I was so afraid of getting sick that I ended up throwing everything away. The botulism scare was real. It wasn’t until I watched you and other RU-vidrs that I got over my fear. Thank you so much for all you do. Take care.

I have been pressure canning for years and now I have taught so many of my friends to can and my daughter and granddaughter also can't tell you how wonderful it is to share my safe instructions with them and see them excited to do this thanks for sharing all your wisdom and advice

I am sharing this to a lot of my friends that always say they can't can because it scares them. I do a lot of canning for them and they help with the prep. But I'm 70 years old and I won't always be able to help them. Maybe this is a push they need. Thank you.

Maybe have them do the actual canning while you watch (to make sure they don't make any huge errors). Think of yourself as a tutor :D

I used to can all the time. But...The food usually ended up on the shelf, and stayed there. With the exception of tomatoes. I canned some 2 days ago. I don't even buy canned veggies from the store. We just don't care for them. Which is why I learned safe freezing. And now, I freeze dry. So, it's preference too. My family GAGS when I Used to boil chicken. So, I roast, and grill and bake. There are many ways to preserve, PICK one or 2 and do it! Thanks, Leisa!

Thank you for this video! I’m a 26 year old (sub)urban mom and wife who works part time outside the home- not your average viewer it seems- and I’m trying my best to do what I can for my family in terms of preparedness. I have a major fear of canning (particularly botulism), but I’ve been getting started on food preservation with freezer preps, fermentation, and stocking our pantry with store bought items. I’ve also gotten way more into gardening this year than I ever have before, and it feels great! I have a long way to go but I am learning more every day thanks to accounts like yours :)

I think the most confusing thing to me about canning is---what can be canned and what cannot be canned. I'm working my way through this but I'm often confused about it. Thank goodness for people like you who will show us the right way.

You're a mind reader. I made your missippi pork in the crock pot and it was great but too much stock thinned the pepperchini kick. I was inspired to get a canner (arrived last week) and just picked up the mason jars and ball book today. I'lll do a practice run but eyes are on that missippi recipe (btw, normally not a pork/ham/bacon fan in the past.) Thanks much. Bea

Yes! Thank you for this content!!!! I was a water bath canner (preserves and jams only) for 34 years (age 20-54). I took multiple classes by master food preservers over the years. The pressure scared me. I’m also very respectful of fire and electricity (so at 20 I took a college welding class and that helped a bit). Mostly owning a ninja pressure cooker for 5 years got me comfortable with cooking with pressure and cleaning a pressure cooker including the lid & gasket. So at 54 and with your support here on RU-vid, I bought an all American canner and started pressure canning every recipe I thought I’d actually eat. My hubby thinks I’m crazy. But it’s an amazing and wonderful skill to have. And I’m in the market for 500 recipes for cooking with my ugly chicken In ways my family will eat!!

A number of years ago I found a beautiful Presto pressure canner (think c.1970ish, harvest gold) at a yard sale. I’d done water bath canning and wanted to step up my game. I was terrified to use it. I was afraid I would do it wrong and blow up the house. It spent 2 years on a shelf and then 2020 hit and it was time to get serious. I watched a bunch of RU-vid videos, read my owner’s manual. They all said virtually the same thing- a good sign. Now my shelves are full of stuff. I buy most things in bulk so there’s plenty of extra to can- and nothing has blown up!😁Thanks for the encouragement. Sending hugs and blessings.

Waiting for venting and for the cook time used to make me nuts when I first started . My answer was to buy 2 TIMERS I set one, put it beside the stove, and put the 2nd in my pocket ! Once venting starts, I set every thing and can 'sort laundry' pay bills... you don't leave it alone but you can freely turn your focus elsewhere.

The University of Utah Extension Department has a video with a lady who got and survived botulism. In the video she states the list of things she did wrong. I started pressure canning in 2018. 1. Start by pressure canning water. There's NO waste. Do your research and take your time. 2. Steup a block of time required for the process.

I learned how to can food (safely as well as rebel canning methods) at an early age with my mother, grandmothers, aunts...etc I stopped canning food in my late 20s- early 30s because work life got in the way. When Covid hit home in 2020, I picked up canning again as I was home for 2 years, had lots of time to grow my own food again, and because of the scarcity of every day items that I love eating. It was almost like relearning how to pressure can all over again! The water bath canning was like riding a bike. I started watching a lot of homesteading and gardening channels on RU-vid, so I upgraded to a premium membership to get rid of the commercials. lol My garden is now six times the size of any I grew up tending in my life, and I added fruit trees and berry bushes to help round out my food forest. One thing that I do different this time around is I only use safe canning (never rebel canning methods) to ensure that my food is safe to eat. My pantry is stocked up well enough now that I can potentially feed my household, as well as my sister and brother's household for 6 months. For that, I am grateful. I also love knowing that my food isn't full of salt and preservatives! My doctor is ecstatic with the results of my labs. This mid fifties gal is healthier than I've been since my early twenties! My blood work confirms this. I'm also keeping chickens for eggs now, and am researching keeping quail for meat. I need to volunteer at a local homestead that raises quail for meat and eggs to ensure it's something I'm comfortable doing before I take on raising quail at home.

We've canned a lot but have yet to open and eat any of it, for couple of reasons....1 its too expensive to replace and 2, scared of that nasty bacteria that you mentioned in your video....I'm sure its ok....we always follow the recommendations.... Great information, thank you.

I have done a small batch of beef and some jelly and apple sauce. Just doing small things for now to get comfortable. I use a pressure cooker all the time and I am getting used to the canners

I was confused at first, mostly from watching RU-vid videos of people doing it wrong. I believe Leisa has deleted those, many other “gurus” will poison you. I have the Presto 23 quart canner. The instruction manual that came with it is pretty good. The only CRAZY thing is lemon juice in tomatoes, but not spaghetti sauce. Note… you can cook tomatoes forever, you can pressure can them at longest time. You can make stuff from canned tomatoes (spaghetti, chili, salsa) and pressure can it. I personally would not re-can other things, because cooking time becomes excessive.

I am an educated person and have learned some challenging things but I am so scared to use my new pressure canner that I've had for over 2 years now. LOL! My grandmother (my dad's mother) canned from their garden every year but my mother had a fear of canners and I never learned. 66 now and bought a canner then was told I couldn't can on my old electric stove. The coils supposedly don't heat at a steady rate. I can't change the stove so I'm stuck. ❤️👍🇺🇲

My G.E. countertop cook stove is probably 30+ years old but I spent everything I had on this house and can't afford to replace anything, I can barely afford to keep up maintenance but maybe I can afford to get this if it will fit. Sorry missed the live, hopefully someone can direct me I was pc navy beans after watching the youtube 3x, my 1st batch turned out ok just not filled 'full' because I thought they would swell more. Anyhow, had another batch worth soaked but no time to pc & no room in the fridge to store them so I put them in the deepfreezer, can I thaw them and can them or just thaw them to use them...duh, should have frozen them in qt size freezer bags rather than the gallons, panic causes poor choices 😐

I canned for years. I had to move to a new apartment with a glass top stove. I was afraid to use a heavy canner on it so I bought a Cadco KR-1 11 1/2" Electric Hotplate w/ (1) Burner & Infinite Controls, 120v from Amazon. (Not induction). I have been using it for 4 years for water bath, steam canning and pressure canning. It works great. They are not too expensive. Hope this helps.

Years ago when I started pressure canning it tasted good going in the jar but after canning it tasted terrible, I sat and waited to die, thought I did it wrong and had botulism, it was flat sour, still don’t know what I did wrong. Wouldn’t pressure can again for a long time, now I go slow and make sure it’s a tested recipe and I have the time and ingredients to do the recipe.

Ok, I watched your canning 101 video a few days ago, the one with the Presto canner, and I was overwhelmed. That know thingy 😂 mafe me nervous, and honestly, as much as I love books, canning is something I feel I need someone who knows how to do it right there in my kitchen with me, walking me through each step. I did think about stsrting with jars of water, though.

The first thing I canned was Organic Carrots. I just took 8 jars of Red Potatoes out of the canner. They're delicious, make meal prep quick, and no pans to wash.😁 Will be canning pork loin tomorrow. I love canning. 👍😀

Hi Leisa. A great, informative video. I only water bath can, won't repeat my reasons again! but just wanted to say you can still have some great things on your pantry shelves even if it isn't ugly chicken or beans. I love taking advantage of cheap fruit and exchanging with friends 'n' neighbours to get things like pickles, fruit pie fillings, and hopefully this weekend, jelly in my store room. BTW I have called it, and the sign on the door says Doomsday Prep Room😂, for the last few years! Thanks Leisa.

I have water bath canned but never pressure canned I had coworker scare me to the point that I didn’t water bath can for a few years and never want to try pressure canning either I’ve gotten over the water canning and have been doing that again, but still not feeling safe trying to pressure can alone with the pressure canner

Question about water bath: if I need to add more water to the water bath canner when it comes rolling boil and I previously started my processing time, do I need to start my timer again once it comes back up to a boil when I added more water to cover the jars?? Thanks..

If the water is at least an inch above your jars, there is no reason you should need to add water

I've almost got enough for my canner! Quick question. I purchase 3 cans 21 oz. each of blackberry pie filling. Yum. Problem the cans are really dented along the seams. Now I could make pies and I'm sure we would eat them but then I would need bigger pants! Can I recan the blackberry pie filling? Thanks!

Well Leisa, you got me past the fear but the insecurity still is there lurking in the background. You made a comment on a live recently about onions disintegrating in water and I figured I was going to have to freeze a gazillion onions I just got. But then I saw a recipe in ball for pickled canned onions. Do the turn to mush in just water or also in vinegar?

Leisa, I can't believe you didn't mention fear of the canner exploding! People who don't know how the safety features on modern pressure canners work need to read the manual that comes with it (or look up the model online if purchased 2nd hand or gifted used). That was my number 2 fear after botulism...💚

Come on people. It is not that scary or unsafe. Just follow the proper canning guidelines. Nothing bad will happen, unless you try to can and preserve gasoline, then big boom will happen and you house will be gone.

Yes! Thank you for this content!!!! I was a water bath canner (preserves and jams only) for 34 years (age 20-54). I took multiple classes by master food preservers over the years. The pressure scared me. I’m also very respectful of fire and electricity (so at 20 I took a college welding class and that helped a bit). Mostly owning a ninja pressure cooker for 5 years got me comfortable with cooking with pressure and cleaning a pressure cooker including the lid & gasket. So at 54 and with your support here on RU-vid, I bought an all American canner and started pressure canning every recipe I thought I’d actually eat. My hubby thinks I’m crazy. But it’s an amazing and wonderful skill to have. And I’m in the market for 500 recipes for cooking with my ugly chicken In ways my family will eat!!
