We have a cool room so that makes it a little easier, but we let ours age with the skin on for 7-11 days they turn out fantastic! There’s a lot that goes along with that but it’s been working great for years! We do a fair amount of deer so we have a lot of practice. lol
Why does it matter to you what I do with my deer? For a sport where we're supposed to stick together and enjoy the hunt, you guy's sure shit on alot of traditions. Social media and horn hunters are killing the sport I've loved for 40+yrs.
Aging deer is a game changer. I’ve let an old buck’s hind quarter age about 60 days once in a fridge before processing and it was amazing. Would do some research before you try it, but been doing it the last 10 or so years. Great results all but one time the second year I tried it. The older the deer the more benefit you get. Also processing when it suites your schedule is a nice side benefit. Everything other than the back quarters I process right away or within a week depending on the cut and condition.
I don’t hang mine and never had any problems. Mine goes into the freezer the same day or night when shot. If I had a garage then I would try to age the meat and compare.
I should add that I have beecher white oak snd red oak on my property and theacorns are huge so this is why I have alot of bucks in my yard...bears also wich I like to experiment with different things as far as the bears go..I put different foods out like doughnuts cakes marshmallows feed corn etc..bears love marshmallows the best they always eat all the marshmallows first bfore eating anything else snd Bavarian creme doughnuts also as far as trailcams..not sure if the bucks know they are there but bears do snd find them everytime
Correct. The rest all comes to time, temp. and other conditions. All of the pork and beef we buy in stores is aged. Not long. But ages. Pork the least I believe. Flash frozen and hangs for a day or so usually. Beef, I believe hangs longer in a very cold or frozen environment. Enzymes continue to break down proteins, etc. Plus, if you have the conditions, waiting a day or so before dismembering a deer is best because it gives rigor time to settle out.
How would you even know that? I know A lot of people that hunt in ND and very few don't like the meat. Sounds like your pulling A number out of your ass!
I like all that yous talk about on here..I'm from Pennsylvania hunt all my life got alot of bucks one that scores 142p&y wich was a day I was gona go fishing but instead I went hunting..I just walked in the woods close to home got in a tree without any scouting or trail cams no scent no grunt tubes or magical antler jelly decoys fake scrapes or any of that junk..just used what I learned by being in the woods alot to go by...tracks trails droppings and acorns and nobody else thought to hunt this spot bcuz it's a stupid spot..soon as I pulled my bow up to me I had 18 does around me for 3 hours before dark half hour til dark 3 bucks came a 12pointer a 10pointer and an 8pointer..I left the 12 and 10 walk past me and shot the 8 wich scored 142 but I'm not stupid enuf to put it in record books and cause headaches by drawing attention but I will say this..up until several years ago when the game commission made deal with insurance companies and sll but wiped out the deer population..where I live I can hear gunshots from miles away and the first day of buck would sound like a war all day long wich turned into just 12 gunshots if that onbthe first day of buck season ..last year it was around 30 and it's bcuz there aren't many hunters not bcuz there aren't any deer and if yous want I can show you alot of pix of bucks in my yard all year round that I'm sure yous will definately want to try for that are all bigger than the 8pter I shot..I'm talking 8pters to 14pters 30in spreads etc these bucks will probly get hit by cars before anyone gets ghem by hunting them
Just because you never did it, doesn’t mean you shouldn’t now. Much better flavour and makes butchering easier. Meateater had a meat scientist on a few pods back, well worth a listen.
It's generally because of what people were taught. I can't speak for everyone, but I notice a difference. But another huge factor is what is in their diet
Any meat needs usually 24 hours to breakdown muscle fiber which is part of the process an animal goes through after death.. Same day meat is definitely stringy and chewing.. In all of experiences
I don't know about your area but in my area they're all corn-fed bean fed. I do let older bucks age younger dose I age Also 'cause I can it does make the meat much more Tender. But in A younger Deer. It doesn't make much of a difference I like the dryer meat. That aging can give you.

100% true on the lazyness 😂 i like to do a short cooler age if temps too warm. I bought the biggest cooler from walmart, $99 i belive, and then i went to dollar tree and got a bunch of little shallow baskets. We have a huge ice machine near us, so 30 pounds of ice for $5, buy 10 get 1 free. So ill buy maybe 6 bags of ice, fit 3 in the big cooler then 3 more in my lifetime cooler. Ill put the ice bags down, then baskets on top, then the quartered deer onnthe racks. Pull the plug and drain + lift the lid to cycle air as often as you can, then after a couple days, i like to let it hang a few hours at least so that the loose membrane dries a bit and peels right off. This method is NOT the choice, ideal method by any means, but if youre super tired and maybe youve gotta work for a few days, this is a great way to get that carcass temp rapidly cooled down and at the very least, itll buy you some crucial time! Ive got videos of it being a 60 degree day, then i take my Klein temp gun and the center portions of the carcass meat are at 36-38 degrees after just 2 days of this! I dont mean to rant here but hopefully this schpeel helps someone!
