must read - I'm a saffron producer. I have years of personal experience with saffron, it's expensive because it's mostly hand work, gathering saffron flower is really hard probably mexicans who gather strawberries in southern US can feel how hard it is but you should add cold air to it. believe me people you don't want to do it. Spain's saffron is mostly Iranian saffron labled or rebranded as Spanish, thanks to the corrupt goverment of Iran we can't export our own saffron and make profit (billions of dollars) and Spain is making billions of dollars by selling Iranian saffron the profit of which belongs to the hardworking iranians like me who have to live in poor condition so a bunch of thieves in Spain and Iran can make profit, next time when you're buying saffron you should remember how corrupt its industry is and actual producers of saffron (the farmers) aren't recieving even ONE PRECENT of the profit they truly deserve.
Damn that sucks man. I feel for you. Diamonds, saffron...where ever large sums of money are involved you can bet there will be humans there to be greedy and take it all from the others.
Things parents do for us: When I was a kid my dad used to walk a mile to go to a shop to buy saffron for me so that I can put it in milk and drink. He used to go to that shop because that was the only shop where you could get authentic saffron
@@sonicgirl3582 The small business I worked for sold real saffron (in Cali) but unfortunately it has closed down this month because of the pandemic. I recommend finding a local gourmet shop/ specialty food store if you can, they may sell authentic saffron and other spices that you can't normally find at regular grocery stores. The shop owners, employees, can tell you how they get it, where it comes from as well. Saffron has a beautiful, strong scent, I would wear it as a perfume if I could lol.

Being an Indian, (we use saffron in every household) I can't imagine a world without saffron so if for no other reason please help stop this climate change for saffron! It will be a priceless treasure lost, if Kashmir doesn't produce Saffron anymore. That's the only state I trust with this spice. :(
I dont believe in global warming. Like out of all the tons of petrol etc being burned not much in temp has changed. The co2 produced are only poiseness if breated in and the oil etc its made of will run out cuz it takes millions of years to form which is the only problem they create.
if the climate started to change the land already then the damage has been done and it's too late. Good news is that what climate change destroys it also creates. Farmlands are destroyed while... new fertile farmable land has sprung up in what used to be a desert!
my favorite Indian restaurant in my hometown was named Saffron 🤗🤗🤗 Unfortunately, it closed and broke me heart. But I’ll always have good memories ❤️ I have honestly no idea if they used saffron in their food, but every single thing in the restaurant tasted amazing
I think a key factor that is missed is that the US heavily restricts trade with Iran, which makes it an especially hard commodity to get ahold of here.

I believe you can make pigment from it (for food coloring, art supplies, clothing dyes…) Obviously it’s not the cheapest choice but definitely has outlets
My family is from India and saffron is a huge part of our life, my moms saris are saffron colored, saffron is in my favorite desserts and in my favorite dish biryani. Authentic saffron smells so incredible and it makes sugary things taste sweet and flowery like a spice just for sugar. The taste it imparts is unparalleled for sure
I'm from Iran and even though saffron is expensive it is considered a kitchen staple in many households. It is used in rice recipes and desserts, but I like to use it to treat my depression symptoms. You can brew tea with saffron. I highly recommend it.

This is why traceability is so important in agriculture production. Certification seems silly but when the farmer loses out to fraudulent product then the value is shown in the procedure of documentation.
A large amount of Persian food has saffron, it’s a staple ingredient. In my opinion Persian saffron is superior to other Saffron I have tried, for example Spanish Saffron. It’s harder to find Persian saffron though because of political/economic reasons.

The flower itself is so beautiful and weirdly peaceful 💐 looking .. I have smelled and tasted saffron (Commonly used in Kheer , Indian sweet dish) and it's definitely really cool..
It’s very educative programme . One flower gives a few strands of saffron , it’s really a laborious task to collect saffron from the flowers. I wish we could get genuine saffron in the Indian stores .
I bought my little saffron box from a shop right next to saffron fields in Kashmir. I am pretty sure it’s original. About 4-5 strands in a glass of warm milk every night, doesn’t colour the milk much, but has a very faint heavenly smell. The taste is so good. Earlier I used to buy from local shops from other places, and it used to colour the milk (fake colours) and with literally no smell. Once you taste the real deal, u never forget it. The guy is right, it’s difficult to fake the taste.
Iran also produces Saffron which comes second after Kashmir. Spain comes third in rank quality wise but most of Spanish Saffron is fake . So, first go for Kashmiri Saffron then lrani and in last Spanish. I always use Kashmiri but some times lrani also ... but never another Saffron due to medicinal reasons.
Same problem is going on here in Turkey. Government is selling lands that are supposed to used for saffron. Because it makes more mony for them, they aren't thinking about farmers/people. And saffron is so delicate that it could only grow on perfect condition of Safranbolu, a small region in Turkey.
I'm Iranian. We are the biggest producer (and maybe the biggest consumer) of it. You can find a lot of foods with Saffron in it in Iran, even there is an extremely delicious ice cream with Saffron. It's not inexpensive at all in Iran, but I didn't expect that the spice that I consume daily is the most expensive spice in the world. Is there any western food with Saffron in it?
@@marinajabra6415 It doesn't have specific taste. The taste of it is different on different foods, because it usually use for seasoning and marinating. You should infuse it (like a tea) before consume it. in my opinion at first try it on rice, you will be shocked how it taste has changed. If you enjoy, you can try it for marinating chicken(Joojeh kabab).
I remember when me and my grandma tried to make saffron spice. Since in a forest near where my grandma lives saffron grows in spring, we decided to try to make the spice fir fun. We picked two baskets full of it, we took out the whole middle and it still wasn't enough to cover a bottom of a tea plate.
I had 15 plants at one point and got less than a tablespoon of saffron out of it. It definitely takes a lot. That was just an experiment, but I really want to start a new, bigger plot just for saffron so I can offer it at farmers market. And it has a lovely, honey like scent. ❤️
Build greenhouses. You can control the moisture and temperature. And ground all year round. The flower picking process can be automated as well that way.
it's kind of a shame though, crocuses are such beautiful flowers i wish there was a way to preserve the rest of the flower while harvesting the saffron (pressing and drying removes some of the color and shape...)
Pressing and drying removes the colour and shape of the red strand? Also, why would you need to preserve the rest of the flower? Could you use it to re-plant?
@Yomangamer it isn’t about cost it’s about the farmers, from what the images showed it looked like a flower a metre and with farmers that are already piss poor it makes an unsustainable business. It isn’t always about the consumer

My friend's got a farm in Kashmir. I always get some from him whenever I visit him. In Kashmir, there are generally 2 marketable grades Kong and Nevul. Nevul is amazing. 1/5th of a gram of kashmiri nevul will give you the same effect as a gram of Iranian one . The aroma and the taste.

I heard it somewhere that saffron makes things taste a little bit like medicine. I can't unfeel it when I'm eating something with saffron but I really like it.
Imagine not being able to see the stunning beauty of those flowers because your job is to carefully pick as many as you can while earning very little. Maybe I'll just leave saffron out of my diet.
I was looking for the word 'India' in the entire video, but could not find it. But, when there was another video by Business Insider (still standing) where they portrayed Kashmir, they didn't leave any stone unturned to insult and speak against India.
I never knew what those strange flowers were in my yard now I know. They were sparse and not a lot of them. I lived in a area that had red soil and they would bloom in the morning and close by night each day new ones bloomed. I wonder why as a flower they are called crocus and picked and dried it’s saffron?
