Depends on the DM how necessary that all is. But even if its necessary you can do things like read books as well. Possibly learn from other Druids. It specifies 'an animal you've seen before' and thats it. If I saw another druid turn into a giant eagle I'd say I've seen a giant eagle.

For those talking about doing this in their own campaigns, two things to keep in mind. One which would make this easier, one which would make this harder. First, the one that makes it easier is that the Polymorph spell (which also works for this) and Wild Shape both revert your HP when you change back, meaning that you wouldn't actually need to use magic to heal. You go back to normal and its like you never took damage. The other is that all methods of this revert automatically if you fall to 0 HP keeping any excess damage, and the Polymorph option reverts if you lose concentration when you take damage. Most animals have very little HP, so... Be careful to not make your druid (or other party member if its Polymorph) revert before you actually get the meat off. This makes things a little more tricky. Alternatively, if you have someone that can cast True Polymorph, you could turn an object into a creature. Turn a copper coin into a Pig, if it takes too much damage, oh well, you lost a copper coin.

The correlation between hit points and limbs has always been a pretty grey area of D&D rules. Usually hit point loss is viewed as general "wear and tear"; cuts, bruises, broken bones, etc. But major injuries like losing limbs are treated a something different. There's not even a clearly defined hit point cost associated with limb loss, but if HP recovery could heal limbs, you wouldn't need the Regeneration spell and if limb loss was based on HP loss, you'd run out of limbs long before you even reached a high enough level to learn Regeneration. So, personally, I'd rule that chopping off a limb of a shapeshifted creature results in the respective limb still being missing after shapeshifting. Ultimately, it's up to the DM.

Fun fact: When a wildshape is reduced to 0HP they revert. This could arguably mean that if any piece of it is detached it disappears.

That's a workaround if your DM banned Goodberries I suppose. Altough Regeneration has somatic components, needs touch and an empty 7th lvl slot. So I'd advise letting the druid keep at least 1 limb...

Funny thing id, for some reason Nixie ate a drumstick by sacrificing one of Dargle-Bark's... arm? AND I think it was a pork chop that she threw afterward, which is... a rib. That's the cost of low INT high SAG, our dear druid knows he loses bits but not which of them. That being said, she also manages to cook using Fireball when they have a firepit at hand. The gags never end...
