Season. Cover evenly with breadcrumbs. The cutlet must float in oil, it shouldn't cook with the pan touching it.

You forgot salt and pepper. Austrians also tend to use paprika sometimes, so I'm a bit shocked you didn't season it at all. :/

I used seasoned breadcrumbs so I didn't need any more seasoning, but you can definitely add it!
